Historique

Fondé en 2012.

Gretchen’s Here and Now began as a wholesale only bakery in an hourly rental space. On 1 May 2013 the bakery at 700 Copping Street opened to the public after a 4 month long renovation turned a used marine equipment warehouse into a bright neighbourhood bakery!

Have I mentioned how much I love it when peope turn some industrial space into a social hub and go to spot?
This place does that and I only found it because of riding the «nearly completed» Spirit trail bike path. Kitchy and cute and just a nice space all around inside and out.
The baked goods are superb, we had a variety of cookies but the cakes and cupcakes look even better. The server/​baker which I can only assume was Gretchen, will stop her busy routine and chat. She is super personable, and I wish her the best of luck with this venture (I will be back!).
Breweries in the area make me think this could become an off the grid destination

I ordered an almond cake with white chocolate frosting and O.M.G. It was delicious!!!
Super moist, perfectly sweet (not too much) and flavourful.
Perfect cake to order for any GF party.
Gretchen added layers of the white chocolate within the cake as well which made for a pleasant surprise.
She uses all organic ingredients as well which to me is high priority.
I’ve found my bakery!

I walked in and the first thing I noticed was the very large whole cakes. I knew that the minute I saw that cake and looked at the other pastries that it was game over on the daily healthy eating. I wasn’t ashamed about being defeated by the sugar. I tool some bars to go for home but ate 3 on the bus.

An amazing bakery, delicious goodies and lovely staff. I appreciate the quality of ingredients and care in preparation that goes into each item.
We’ve had 2 chocolate birthday cakes and 1 carrot– each were beautifully presented and delicious!
Make sure you check it out on your next visit to the north shore!
Ps– try the meatloaf sandwich on buttermilk buns … Yum…

Fun little healthy bakery shop where everyone shares a table. Love the rhubarb bar which was excellent. Can’t wait to come back. Good luck parking.

Fantastic baked goods, excellent ingredients. I got 4 different bakery items and they were all delicious. This is such a cute spot, like you’re eating in her kitchen (which you kinda are as it is an open concept). Nice touch with the cards you can buy if you are giving baking as a gift.

Nicely Designed Bakery with hopeful New Proprietor that make very good quality and tasty bake goods without taking herself or baking too seriously. I had a great fruit and nut muffin and darn good cup of coffee. Gretchen has a open concept business where she and move her display area to create more space for backing for more space for guest based on needs of the day cool design. I be back.
