Historique

Fondé en 1984.

The Chef/​Owner of Trattoria Timone has been in the industry for over 25 years. He started as the Head Chef and created the menu using his own imagination bringing exquisite flavours and presentation to each plate. In 2003 Chef Michel took over ownership and maintain his reputation by staying involved with the business hands on. His passion for food is evident in the quality of the gourmet Italian meals. Not only are they authentic Italian, but everything is homemade, everything from the sauces, bread, gelatos, ice creams, pastas, etc. The long time customers and staff are a testament to the restaurants success. The food, service and atmosphere is dynamic.

I have been working as the chef of Trattoria Timone Ristorante since 1992, and took over ownership in 2003. I am the longest standing chef in any one restaurant in oakville. I employ many family members, including my brother Gino who is now the head chef, sister Linda who is dining room manager along with my wife Anna and daughter Kasia. My family background is Sardinian, which is an Italian island. I have been in the restaurant buisiness for more than 30 years. I specialize in regional Italian/​Mediterranean cuisine and I love what I do and take great pride in my business. I love to share my passion through cooking and creating a memorable dining experience.
