i only had breakfast here cuz i stayed in the hotel. the only good thing about the breakfast buffet is the omelet bar. the chef is personable and there is a good selection of ingredients. they seem to really want to play the«local and seasonal» game, but 99% of the buffet was still mass produced and heavily processed. i did really appreciate having a salad on the breakfast menu though. it was hearty and delicious. all egg dishes seemed a tad too oily. coffee had a weird taste. raspberry was moldy.

** A VALENTINESDINNERTOREMEMBER** 2÷14÷2016 We spoke with the Mgr. Katie Casey on 2÷8÷2016 to set up reservations for our Anniversary Valentines Day Dinner. We arrived promptly at 2:00PM. Valet parking for $ 5.00! We were greeted & seated promptly. Our server, Bonnie Shaw was very professional & friendly, and certainly knew all of our menu choices that had been pre-ordered. The staff worked as a flawless team, including management to make sure all of our needs were met & satisfied. Appetizers: Calamari, Hummus, Olives & Pita Bread, Pimento & Fresh Chips. For the main courses, we chose Lamb Chops, Collard Greens Over Fresh Mashed Potatoes, Tai Sticky Wings & Sweet Potato Fries. All of these Menu items were brought in by our wonderful Chef Derek & Jane & cooked special order. One of our children ask us, Why do you go there each year? Our answer is simple, We know our food will taste delicious, the atmosphere will be Modern & Upscale second to none, our servers will always be Welcoming & Friendly, Service will be excellent! Went Christmas Day for lunch. Food was okay. Pimento cheese and chips were really good, but hummus had started to harden on the outside like it had been sitting around a while and veggies were soft. Burgers were pretty good too. But… the service was the WORST! Our waitress, I think her name was Margo, was so rude, and not to just us, but to everyone in the restaurant! Everyone sitting near us starting make jokes when she went in the back it was so bad. Nightmare. Never going back.

Delightful and unexpected. A caveat that I only came here for breakfast. Yes, it’s located in the Bilmore Park Hilton lobby. Yes, it’s kitted out exactly like thousands of other hotel lobby restaurants with overly fancy culinary-linked titles. If you’re like me, you come to expect hotel breakfasts to be horrible and are quietly hoping that is is merely bad. But Roux is different. Their buffet superficially appears like other buffets — standard fare of pancakes, sausages, bacon, omelettes, roated potatoes, etc. But then you’ll start to notice that this isn’t standard defrosted service-pack fare. Little delightful differences shine through. «Hey, their coffee isn’t bad. Actually, it’s pretty good.», I said. «Hmmm… they’re eggs are organic. And the ingredients look fresh. Hey, wow, the chef actually knows how to make an omelette. And what’s that? He’s nice and genuinely wishing me well?» «The roasted potatoes have some roasted singe on them. And there’s fresh spice on them. What witchcraft is this?» And then there is the bacon. Now THIS is bacon. This could very well be the very best bacon I have ever had. Country thick. Perfectly cooked — crispy without being burned, still chewy without all the flavor/fat rendered off, and oh… I might need a moment alone with this bacon. Service from our waitress and hostess was fantastic. The cooks were whipping out ala carte dishes and omelettes quickly. Unfortunately, the busboys were milling around and waiting for goodness knows what. But the hostess stepped up and more than made up for what I hope was their lack of experience and not laziness. Those two ladies got cash tips in their hands because they more than made up for their not so motivated coworkers. Net-net, great service. The price — not too shabby. So, my wallet didn’t get ravaged, service was great, food was pretty good, and the bacoooooooooooooonnmm[drool]omnonononom. A bit of advice, Roux still has the look and feel of a hotel breakfast buffet area, so I might not come here for a first date — but okay if you’re a been married for awhile. But absolutely come here for breakfast if you’re in the area, no matter if it’s year 1 or 100.

I had a delicious meal and enjoyed the special of the evening, trout. With some fantastic squash, apples and pecans. The trout was perfectly seasoned and cooked, fresh, fresh, fresh! The wine list hit the spot too. We also tried the other special pork with brussels sprouts. So good. I will definitely go back. It’s a hidden gem, on the much-traveled path of Biltmore Park. Don’t tell too many people:)

While staying at the Hilton at Biltmore Park, the Roux was very convenient for us. During our stay it was downpouring and we didn’t feel like driving or walking in the rain. This restaurant choice was extremely good. I got the salmon and it was absolutely delicious. I loved the sauce that was on the bottom. The customer service was really good. I don’t remember our server, but she did an amazing job. She answered any questions that we had about the dishes The only reason that I gave this restuarant 4 stars out of 5 is since our crème brûlée was watery. The server removed it from our bill and understood that crème brûlée should not have that texture. The next time I come visit North Carolina, Roux is one of the restuarants I have to visit.

Terrific value and great food. Had both lunch and dinner here today. The service was friendly without being intrusive. For lunch, we shared the calamari which was outstanding… crispy, delicate, not greasy, and served with fried spinach. We also had salads: mine had arugula, Granny Smith apples, pine nuts, dried cranberries, served with a light white balsamic dressing. My husband had a spinach salad with sugared pecans. Both were generous portions… more than enough for lunch. With tip, the lunch came to $ 26! The food was so good, we went back later this evening. Again, the value was great. We shared the charcuterie board appetizer of locally sourced cheeses, sausages, homemade pickles, mustard, jalapeño jellie, nuts, and so on. Absolutely terrific. It was served along with the bread basket of fresh cranberry fruit bread and garlic bread and would have been a satisfying meal by itself. But, we also ordered the pork chop entrée which was grilled and served with roasted asparagus. My husband ate his with the mashed potatoes that it came with. I ate my entrée with a side of mushrooms in a sherry reduction. Again, all were perfectly prepared. Including the glass of wine I ordered, the dinner bill with tip was $ 53. This restaurant is the best kept secret in Asheville. Can’t wait to enjoy the breakfast here tomorrow morning. If I have room.

We were staying at the Hilton(the restaurant is located inside) and had both dinner and breakfast at the hotel. We decided that we would dine at the hotel for dinner rather than eat somewhere in Biltmore Park due to time constraints. The atmosphere is very nice and the relatively new. The waiter that we had was somewhat unsure of the menu, but still ensured that we were content. My fiancé ordered a salad as an appetizer and the server brought out dinner rolls, both of which were good. For dinner, I ordered the crab cakes and she ordered the chicken gorgonzola. The crab cakes contained plenty of jumbo lump crab meat with not a lot of filler and also came with a tangy slaw which was good. The chicken gorgonzola was cooked well and came with what the restaurant called the potato of the day which was mashed potatoes that contained horseradish. We took desert to go which was bread pudding that contained figs and were basically satisfied. One good feature was that was saved fifteen dollars on our bill because the restaurant was offering fifteen dollars off if you spent forty dollars or more(which is easy to do for a couple eating out), but was only offering this until July 31st, 2015. Breakfast buffet was included in our hotel package and was just as good, if not better than dinner. The service was better and the waiter had a very positive attitude. We ordered coffee and orange juice and found that the selection at the buffet was quite good. All of the food was amazing(remember this was a buffet), and guests can get omelets to order as part of the buffet. Overall we were very satisfied with our dining experience and would recommend this location to anyone dining in the area.

Not bad, but not great. There was no hostess, so we had to grab menus and seat ourselves. The waiter was nice enough, but knew nothing about the menu(new hire?). Twelve dollars for a salad was a bit much for what would amount to a side salad elsewhere, but the blackened shrimp were amazing. Probably won’t dine there again.

Bought breakfast as part of room. Was told buffet is until noon. Monday at 10:02 we were greeted rudely by red headed girl that tells us we can’t eat because they close at 10. That should be made clear at check in and hostess should not be rude. When we did eat there food was average at best.

I’ve had breakfast here a couple times and the brunch on Sunday is out of this world! I ate dinner here last night and it seems to be a well kept secret of Asheville. It was not too busy and the service was amazing. Julie at the front desk was a great help and had friendly and welcoming smile. She directed us to Catie who got us taken care of and seated. The friendliness here at the Hilton is by far the best and I stayed at many Hiltons over the years. As far as the food goes it was very well prepared, tasteful and brought out in a timely manner. We had the 6oz tenderloin with the potato of the day and barbecue salmon. Both of which were very tasty and well prepared. We had the cream Brulé for dessert which was absolutely outstanding. I couldn’t think of anything that was wrong with our meal so I’m giving giving it 4 stars. I would definitely go back for dinner and I know for sure I will be there again for the breakfast. Great place and not too busy all the times I have been.

Aah, Roux… the last restaurant in Biltmore Park at which I had not dined. This was a mistake. Being in the lobby of the Hilton, having a name like Roux, dim lighting, full bar, I expected a pretty expensive place serving up steaks and things I can only afford every once in a while. I was incorrect in this assumption. The AIR Passport brought us in here. Seriously, y’all, you’re doing yourself a disservice if you don’t have one of those things. Google it. But I digress. The place was pretty quiet, owing partly to it being a pretty miserable Saturday night, all cold and rainy. It livened up shortly after we sat down when a guy in the hotel lobby surprised his girlfriend with a surprise marriage proposal featuring her entire family and all of their friends. Even with that, though, the restaurant was prepared and handled all of them, along with us, with no problem. Our server, Autumn, was just fantastic. She was friendly, knew the menu top to bottom, despite having only been working there a short time. It is the prices that wowed us here. Our appetizer seemed like a steal. $ 5 for a hummus and olive plate? I’ll bite. Absurdly awesome amount of delicious hummus and a great selection of 4 different types of olive. I’d have gladly paid $ 10 for it, but the menu had it listed at $ 5. Imagine my surprise when the bill came, and it turned out the menu was wrong. It was only $ 4! Entrees were both delicious. We had crab cakes for one(full of lump crab, delicious sides), and an open-faced meatloaf sandwich for the other. Pains me to admit that this meatloaf owns mine. Finished it off with bread pudding and a drink from the bar. Got out for what would have been $ 65 with tip, but ended up being about $ 50 with the AIR Passport(did I mention get one?). We will undoubtedly be back probably anytime we can’t think of what to eat and we’re down south. Well done, guys :)

Awesome food. Amazing staff. We were pleasantly surprised by the quality of the food and the attention to detail of the staff. Definitely not what we were expecting from hotel restaurant. It far surpassed expectations and Roux can definitely stand on its own! Well done. If having dinner ask for Robbie’s section. Breakfast, ask for Jay… he made for a humorous morning experience. Katie does a great job keeping the restaurant running. Well done.

Just finished dinner part of restaurant week. Although the food was good we were told there was only one chef for the hotel and guests. 11⁄5 hours after being seated we got our food. But they must have forgotten about restaurant week as they tried charging full price. Doubt I will go back.

Opened for dinner and members of Asheville Independent Restaurants(coupon in the passport 2 for 1). My vegetarian husband and I had dinner there this weekend. What a surprise. Sure it’s inside the Hilton in Biltmore Park, and it does seem a little strange for town dwellers like us to get in the car and drive to this local, but Roux really seems like a bonafide Asheville restaurant. Local foods? Yes. Delicious artistic culinary creations? Yes. Veg Friendly? Yes! They may need to deepen their repertoire for true vegetarians, but what they have is quite good. Wait staff provide excellent service, could use more polish vis-a-vis appearance. I mean, it is the Hilton and a bit more style is expected. The food is above average. Presentation is top notch. Looking for a place to impress a sibling or in-law? Look no further.

What a wonderful surprise. We tried out Roux because of a friend’s suggestion and he was absolutely right! We went around 11am on a Saturday and they were serving breakfast. Both the traditional benedict and fried chicken sandwich were amongst the best we’ve ever had. Friendly staff, and the setting is quite nice for being in a hotel. We look forward to going back and try out their dinner menu.

Roux is the best kept secret in Biltmore Park. I have had soooooo many great experiences there. Kudos to the executive chef! Great options for meat eaters and vegans. Easy to please a group here. The service is spot on-every time. Even the breakfasts blow me away. The creativity in the menu combined with technical execution by the chefs make Roux one of the region’s best.

Holy super surprise! This is a gem tucked into the Hilton hotel. The quality of food is superb! We were told Roux was rated the HIGHEST of any Hilton restaurant across the brand… and I thought, ‘really’??? Really! If all of Asheville finds out about this place, it will be FLOODED with patrons. Perhaps it is overlooked because of its location. Get smart, people! You need a night at Roux! The Scottish salmon was perfection! Charred and served with a delicate BBQ sauce, in a nod to the region’s penchant for ‘que. The grilled asparagus and potatoes were great accompaniments. My husband’s ribeye was seared to perfection. Really attentive and superb service as well! This is destination food in a foodie locale! Head out!

We ate the Thanksgiving buffet, receiving one of the last reservations available. I thought that might be a bad sign(late in the evening, staff worn out, food tired and stale) but I was soooo wrong. We were seated immediately, our staff couldn’t have been more cheerful!!! The food was intriguing and delicious(a twist on my «normal» Thanksgiving items), and when our wine selection had sold out we were offered a comparable wine with a nice discount. Definitely exceeds my experiences with hotel restaurants!
