First time customer and I was amazed! Best Wurst what??? Flying Pig fan for life;) The Strasburg is a braised beer brat with poblano kraut was amazing. Everyone I talked to loved it. Get you some !

Flying Pig, «You had me at Bacon!» I met these guys at the Barton Creek Farmers Market. The specialize in making small batch artisanal meats. And they do this the old fashioned way, naturally, hand rubbing them daily with herbs and spices, then smoking them without all the extra additives you get in store bought bacon and deli meats. Jake M, the guy running the booth here, is friendly, knowledgeable, and passionate about their products. He even indulges my new ideas, like when I mentioned they should try making bacon bark(yes — with chocolate). I first tried their Italiano bacon, which was similar to a pancetta and delicious. Then I tried their ancho pepper and espresso rubbed bacon, called the Rise & Shine. Such a unique combination of seasonings made for a great egg and bacon muffin. Their bacon is the best I have ever tried. I have since eaten their smoked turkey and their Lafayette turkey with Cajun spices, their ham and roast beef. My favorite is the Lafayette which I have been buying weekly for lunch sandwiches. And the best part is, it is fresh and has lower sodium than the deli meats you buy at the store, because it was not meant to be sitting in a deli case for for unnaturally long periods of time. They also sell sausage, olives, pickles, kraut. bacon nuts, bacon scraps, pork shanks and more. Everything they do, is hand made using traditional farmhouse methods which makes these the closest to fresh you can buy. Also, what is better than bacon? Bacon delivered to your door. Recently, they started a home delivery service where you can pick the meats and the frequency of delivery starting at a $ 25 order. So apparently, pigs really do fly(or at least drive to your door).
