1. Had a project requiring my office presence at 0645 Friday. 2. Successfully completed it at 1035, and was stupid hungry. Showed up at the official 1100 opening time of Three Chicks Soulfood. 3. The Three Chicks are Chef Kunstance and her two daughters. 4. Chef Kunstance apologetically informed me she couldn’t open until noon, but would make me a sampler plate of everything if I returned. Deal. 5. All entrées are deep fried on «Frydays.» Cute. 6. Seven people showed up after me at noon and ordered. Chef Kunstance was also taking phone orders. 7. When she brought me Part I — ribs, greens, mac & cheese — she informed the other seven people her fryers had gone down, and returned their money. She then took those seven people fifty feet away to the Rolling Rooster trailer and bought them chicken & waffles. 8. In the meantime, I’m going down on deep-fried pork ribs which I’ve never seen before, and wondering how she made her mac & cheese so creamy. 9. And then she brought me salmon croquettes, the last gasp from her fryers. I took a bite and did my own gasp: «Supercalifragilisticexpialidocious.» 10. Chef Kunstance apologized for not being able to complete my order, and wouldn’t take any money from me. I wasn’t quite sure how to handle that. 11. The serious & somber Unilocalers adept at detailing every fault about a business will have a field day here. I’m thinking, «This place is kind of special.» 12. The plan is to revamp the Howard lane lot by next March and make it a destination food truck court. Wherever this trailer winds up, I’m following. I’m curious what Three Chicks do with oxtail. Mmmm, meatloaf. 13. I went back to my office and fell asleep. Got a text from a cool Unilocaler that woke me up. And that’s pretty much how I spent my Fryday. Thanks for reading.

Oh so good! I had the Wednesday Smothered Pork Chops with mac and cheese, cabbage, and corn bread. Definitely will be back on Monday for the meatloaf. Outdoor seating and plenty of parking onsite.

My first food truck experience since moving to Austin, and it was worth the wait, the food is out-of-this-world! 5(if possible 6) stars for the food alone. Went with a friend at lunch on Friday and we both ordered the special. For me that was: cornbread-based dressing with gravy, two pieces of fried chicken, mac n cheese, black-eyed peas, a side of canned cranberry sauce and lemonade. Felt like I was eating Thanksgiving dinner :-) My faves were the dressing and peas, they tasted just like what my mother made on the holidays. They pack everything in a to-go container so its very portable, cutlery and a plastic bag. There are a couple of other food trucks in the lot with a few tables for seating in the middle. We were there for over an hour and there was a steady stream of cars in and out, and I understand why. The one-star deduction is only because I stayed to eat and the flies were bad(not that I blame them, the food smells mouthwatering) and also the seating was downwind of another truck with a smoker. So I smelled like hickory smoke for the rest of the day. So take your order to-go/eat in your car or bring some insect repellant. That said, I’ll definitely be back, the food is worth it. Plus they offer catering, and I’m seriously thinking of ordering from Three Chicks for the holidays…

Ok people. This is my first check in, first try of Three Chicks Soulfood. I’m in my car and have had one bite of the delicious chicken and dressing. It’s just like we make at Thanksgiving. cornbread dressing! Soooooo good. They have call in orders as well. Called mine in, and it was ready when I arrived. I think I’m hooked and feel the overwhelming need to try everything on the menu and tell everyone to give them a try too. Food is hot, good portions, I can’t wait until braised oxtails Saturday!
