I took a deer to them for processing on December 4, 2015. I understood the deer would be processes individually. I liked the idea that I would be getting my own deer back, so that was a bonus. Mid January I finally got the call I had been waiting for. The amount of meat was accurate, with the tenderloins on top. I had ordered two batches of summer sausage. one regular and on Jalepeno and Cheddar. I finished paying for my $ 200 order. Although the sausage has decent flavor(salt and smoke) it has been overcooked and is too dry. The summer sausage I am used to having is juicy and tender. The Jalepeno and cheddar style is so dry that the cheese is crumbly inside. I don’t know how many of you like your deer summer sausage dry like salami or pepperoni, but I prefer mine to be like the deer summer sausages I have had made in the past. Perhaps they should change the description to deer salami, which would better fit the product in my opinion. I bought some mild Cajun hotdogs while there, and they were pretty good. I also bought some beef jerky which was pretty good. Overall, they are probably pretty good but it would have been great if they had a sample of their products for us deer hunters. Santa Fe Trail meats in Overbrook is one place to go for good deer sausage in my opinion.

Had been wanting to get by here for a while and boy was I missing out by waiting so long. Got a special which came with my choice of 5 packs of 4 sausages 2 boxes of burgers and a jar of sauce or a pint of pickles. We went with pb and j(unbelievably awesome) bacon, habanero, jalapeño,(favorite) And a chicken Rosemary garlic bratwurst. For the burgers we elected to go withe«the man burger»(beer bacon and cheese) and BBQ also pretty darn good. The burgers stayed juicy and did not shrink much on the grill. My son also got a sweet deal on some beef jerky by whom I assume was the owner. Custumer service was great and personable. Good price and a great product.

Signature Sausage Co has some of the BEST lunch food you can get and for a good value too. That is all I have tried from them, but I am sure that I will love the rest of their offerings when given the opportunity to try them. They are one of the few companies that took their time and money to go serve the soldiers out on Ft. Riley, KS for quite some time. Wonderful tasting food with huge servings. If you leave hungry, you’re not human. Worth your time to try!

I went into the store to see what its all about and ended up buying and trying the summer sausage, red hot brats, pineapple brats, cajun brats, italian sausage and the original sausage. I have to say that these are the best brats and sausages I’ve ever had. I haven’t been able to get back to buy more since yesterday but me, my girl, and my kids have already ate what we bought. This place also can process deer for hunters and other wild game. I highly suggest going by and buying a summer sausage and atleast two types of brats from these guys and tell them Travis sent you(I told him word of mouth with that quality will be his only needed advertising).
