They make and sell cheese curds! They call them something like«cheddar bites,» but they are curds, and they are fantastic. I first tried them at the VT Garlic and Herb Festival in Bennington, though I’d had their mozzarella plenty of times before that. I wish those curds were available more widely. The mozzarella is superb too though, and you can get it at Whole Foods or Roche Bros. for a fairly reasonable price. I really wish this review was for an actual venue in Boston because I would go to there all the time.

Maplebrook farms is a traditional cheese maker in one sense, using local milk and«hand» making the cheese, however, they are not producing a farm or cheddar cheese, instead they produce mozzarella and ricotta. This farm is not open to the public but their cheeses are reasonably widely available in the area. We sampled the mozzarella and the cherry wood smoked mozzarella. The mozzarella had a nice, firmer and stringier quality to it than most but was quite bland and otherwise unremarkable. The cherry wood smoked mozzarella was this same cheese except, thoroughly smoked with a truly outstanding(but mild) smoked flavor. What was most important about this smoked mozzarella was the penetration of the smoked flavor throughout the mozzarella. most smoked mozzarella tastes smoked only on the outside, this cheese tasted great throughout and is among only a handful of mozzarella’s that I have tasted that have managed this. While their cheeses were not truly outstanding, the smoked mozzarella is definitely worth a try.
