Passione Pizza

My husband and I were at the 2015 Eat Real Festival in Jack London Square in Oakland. I did a check-​in and headed to the Unilocal table to pick up a freebie. I missed my Unilocal buddy, Albertino M, by about 10 minutes. Well, I have him and Victor G to thank because I didn’t have an address for Passione Pizza to prepare my review. I can always rely on them to help me out.
The line for Mozzeria was long, so I headed to another area to see what other food vendors were around. I spotted Passione Pizza. They were selling three types of pizza for $ 8.00 — eat real squash, diavola and margherita. Whole wheat and gluten free crusts were available.
Specialties: Eat Real Squash contained fresh cherry tomato, roasted summer squash and zucchini, goat cheese, organic tomato sauce and mozzarella. Diavola had spicy pepperoni, kalmata olives, organic tomato sauce and mozzarella. The margherita was a basic organic tomato sauce pizza with mozzarella and fresh chopped basil.
The pizzas are baked in an oven on wheels (mobile type). Two male employees taking and serving food orders and two employees (male and female) are in working the «kitchen» — preparing and baking the pizzas.
The table has bags of organic pizza crust mix and business cards. Fabrizio Cercatore is the Founder/​CEO/​Maestro Pizzaiolo. Service was friendly and cordial.
Eats: Margherita pizza. The crust was slightly burnt around the edges. I was not totally impressed with the pizza. There were no heirloom tomatoes or San Marzano tomatoes on it. It was lacking in olive oil. It was somewhat lacking in the fresh chopped basil. I have become so spoiled to the margherita pizza served at Tony’s Napoletena Pizza in the North Beach district of San Francisco. Forge’s margherita pizza (Jack London Square) is also better. The margherita pizza at Spin! in Alameda is slightly better than Passione. At least the crust had a chewy texture. The only part of the pizza I did not eat was the burnt edge. Rating: 2.5 stars.
Finally, rating is rounded up to a 3 star for Passione for being at the 2015 Eat Real Festival.

Time: 1:17pm/76°F sunny
Purpose: Departed Unilocal table on my way to check out food offerings. Pass by Mozzeria saw no line as pizza was just a thought to start. Saw PP didn’t second guess from there. Pizza was chosen to start off EatReal ceremony.
Set-​up: A trailer with built in oven only smoke stack protruding out from top. Plexiglass side windows show oven being handle with long paddle techniques. Makeshift counter table with rolls of stickers, menu, brochure, cashbox, parchment paper, corrugated circle board, napkin dispenser, DIY pizza mix, sample slices, stand up privacy drop cloth, and tip jar.
Staff: Lady and guy duo working in conjunction with each other. Guy was on platform trailer with long reach paddle doing his thing while lady take order and handle payment. While watching on, I ask what does «Where Flour Becomes Art» means? She told me pizza guy went to school learning flour art trade then got his certification.
Cleanliness: Grade A, all supplies and equipments are clean and store away. Only wooden cutting board area show crumbs and flour as samples are offer from it.
Eats/​Drinks: Diavola pizza $ 8 was under bake. Hence Victor G review. After receiving it, I snap a photo right away as cheese don’t look appealing when cold. First piece lifted, it didn’t feel right. Why? Well either pizza cutter wasn’t sharp enough or it was still doughy. Top of pizza show cut lines, but feel more like a scoring line. I had to set everything down using both hand in tearing motion. What effort just to separate a slice. Alright, I overlooked those imperfections for a tasty wood fired pizza. Wrong! My pizza reveals doughy consistency while the rest was just average. Bottom was nice, but middle was about 25% under bake. Edges were soft not much volume or some crust. Olives, pepperoni, mozzarella cheese just average. Nothing you couldn’t do at home provided if all ingredients are on hand ready to go.

Punch Lines: Average price, drool-​worthy, special bargain, samples, budget-​watchers, nothing out of the ordinary, char crust pizza, quite bland, not as great, go elsewhere, struggling with oven, three choice of pizza, 5 min or less wait time.
Tradeoffs: Since pizza are under bake your next best bet is to buy their DIY pizza crust mix. This way you can ensure pizza will come out to your liking at home.
Final Thoughts: Pizza maker went through a prestigious school to learn about flour art. He hailed from Florence Italy. That’s nice and all, but a doughy pizza will not make the cut to be in «Best Pizza Maker» in America. Next step is the master the heat. I understand these custom made oven have no digital LCD display, but good judgement and temperature control is a must. You’ve to know how hot internal temperature is at all time. PP has the right plan, ingredients, knowledge, presentation, but falls short on pizza execution. Since my pie was on the house, and staff were friendly with samples given out. I’ll go with solid 3 star as it can be better. Lastly 9 total reviews with five of them solid 5/​star no profile pics/​no friends. That leaves only me only four reliable source to go on.

Passione Pizza was something to look forward to. sadly, i ended up throwing parts of the pizza away, bitten but uneaten. my hands/​pockets had to be free to hold fab eats, not just
uncooked wannabe eats.

I ran into this awesome little traveling pizza parlor at Rhustaller Tap room in Dixon. This pizza is delicious!!! They were nice enough to give out free samples of their pizza dough which is so good. I really enjoyed the pizza. The crust is amazing.
Full on Chef with many years of experience is on board. French guy very nice youngster. He started in a kitchen at 14 y/​o. He had a baby and made the decision to leaving the 18 hr days to strike out on his own.
He mentioned he can cater any kind of food or menu you desire. Check them out if you ever find them. Sooo good. Good job guys !

Having recently returned from living in Italy, we were desperate to find bread/​pizza dough to re-​create the authentic experience. Passione Pizza tastes exactly like the fresh bread served in the trattorias in Rome. Not only does it make the best bread and pizza dough, but it’s also only 220 calories for the entire loaf. It’s the best of both worlds: You can hit the California beaches and indulge in pizza!

In a neighborhood that has a dearth of options for picking up lunch in the immediate area, this little pizza trailer is a revelation. They offer up 2 or 3 choices of topping combinations (for both the vegetarian or the carnivore), and the crust is sublime — just the right ratio of crispy, chewy, and soft with a wonderful smoke-​infused flavor. The real test is whether I’m inclined to eat the entire slice and all the back crust, and I am and I do!
I don’t know where this place has been all my (work) life, but I am pleased it has landed in West Berkeley!

The days I don’t eat out at Italian restaurants, I make pizza at home. I have tried Trader Joe’s pizza dough to wholefoods dough and local Italian market frozen pizza dough. I have bought Passione Pizza dough ball when I visited my friend in Sacramento. Passione Pizza dough was easy to handle and the consistency was perfect and it tasted amazing! It is by far the best pizza dough I have ever tried making it at home! I’ve read on their website and love the fact it was created by Italian chef from Italy — can’t get any better than that!
My next move is to try the crust mix and make it from scratch for real!

This is, by far, the best Pizza I have ever made at home. Super simple and super delicious. The dough has a unique flavor unlike anything else I’ve tried.
I got their frozen dough ball to keep things simple. I’ve made pizza at home before and it has sometimes been a bit of a mess. This dough has a lot of elasticity so it won’t fall apart easily.

Found the pizza dought at nugget market in Davis, it’s organic and super tasty! Love it

Pretty decent pizza! Located right in the corner of a parking lot for now, they make their pizza in a small trailer with an oven, so you’re gonna have to wait a while to receive your pizza!
They don’t have a lot of ingredients, but they– the olives, salami, and cheese– taste fresh! Their crust is pretty thin, but not very. Slightly crunchy and slightly soft. They even provide glutein free!
$ 10 for a whole pizza that’s like a medium at other places is a pretty good deal!
