Bethel Islanders have discovered chef Troy Townzen’s excellent Bistro menu, the restaurant’s piano bar (highlighted by a beautiful Falco baby grand piano) and an atmosphere reminiscent of «Cheers,» where friends meet and greet from 4 p.m. till after dinnertime. It shouldn’t be long before all East County discovers it, too.
Big eaters can finish off with a root beer float, warm fruit crisp or other delectable desert special. A special Pub Grub menu contains eight items for starters that can be purchased in the lounge or dining room for an average of $ 6. You can order such delectables as Prawn Cocktail, Burger, Soup and Salad, Pub Fries or Cajun Steak Stix.
Marshall’s rib-​eye steak covers a sizable portion of the plate. With your choice of sides ranging from mashed potatoes to pasta to veggies, plus rolls and dipping sauce, you’ll get all you can eat and then some. The Bistro’s menu is intentionally limited. The Marshalls don’t want to offer excessive choices and lose quality control. «We want to be the best there is at what we offer,» Rich said.
Rich Marshall has always wanted to own a restaurant where he could call the shots, produce a really nice selection of dishes, have a great bar and a service-​oriented staff. He and wife Geri appear to have realized that dream.
