I bought their cheese from Wholefoods but when Idecided to eat it about a week later, it was totally green. I was so disappointed. It was the aged cheese but I didn’t think it wouLd age that fast.

While in MO for the holidays I heard about a goat cheese tasting at the local Phillips 66 Gas Station. What? I guess thats how they do things in the middle of nowhere MO. Well… wouldn’t you go? I just had to. OMG!!! Taste after taste they gave me little smears of heaven on light crackers. (To the other reviewer… goat cheese is supposed to be pretty soft… like Parmesan is supposed to be hard.) Then they tell me about the awards they win… the Golds from California, the International Golds from competitions you wouldn’t expect a little cheese maker from the mid-west to even know about. All their cheese is amazing… if you get a chance to taste it, don’t pass it up. Otherwise order some online every now and then and eventually try it all. All the cheese is hand-pressed into little heart shapes. The business seems worried about growing because their main concern is making the best cheese possible. That they succeed in. Buy it when it’s available, I fear they may eventually sell exclusively to chefs in restaurants.

There’s a cheese stand in Soulard Farmer’s Market that sells goat cheeses from Baetje. I assume the pervasiveness of Christian scripture quotes at the stand and on the packaging means the stand is directly related to the farm. What matters, though: the cheese is awesome, if a bit softer than you might expect.
