This is a great place to get a variety of terrific meats. I was making a «Team Dinner» for my coworkers in December and decided I wanted to really wow them. I talk about cooking a bit, so had to live up to their expectations. So, I followed the first rule of cooking; the best way to ensure a great end product is to start with the best ingredients you can. I got a prime rib roast(yeah, actual prime grade meat) that was absolutely gorgeous. Sure it was a bit pricey, but you really do get what you pay for. This was the best prime rib that I have ever had. The fat was beautiful, not too thick, but significant enough to really carry the flavor, and the hunk of meat(chine was removed and tied back on — hugely helpful!) was as good as it gets. I have since been back quite a bit as their prices for boneless, skinless chicken breast and thighs, are the best in town(if you buy in bulk). While they have a great selection of meats, they also have some local wines(I noticed some Indian Creek Winery bottles), spices/seasonings, BBQ supplies, hog casings, and quite a bit more. They’re my exclusive source for pepperoni, also. If you’re serious about quality, come here. You might be overwhelmed at first, maybe you’ll be underwhelmed, but when you really start to pay attention to what you’re looking at, you will not want to purchase your meats elsewhere.

Sorry to have to remove stars, but the quality of the meats I’ve purchased lately has not been the same compared to my first few visits. I always buy ground sirloin. The last several packages, purchased over two separate visits, contained gristle and just did not have the flavor of ground sirloin… more like hamburger. At $ 6.98 per pound, I expect better quality. My pot roast was chewy. Also, I bought a package of frozen ground pork that, when defrosted, was almost completely white with fat. I tossed it. Doubt I’ll be back. Custom meat places need to be more consistent especially when your customers are paying a premium.

The meat is unparalleled, the prices are competitive and the staff is helpful. Their knowledge about their grills and their products is stellar, and their rub selection is awesome. Some of the reviews here are harsh about the service, but this is a butcher shop, not a day spa. I would recommend this place to anyone.

First of all Choice Cuts does have a quality product and their jerky is fantastic. They have a nice storefront and a professional looking website. That being said I only gave them 2 stars because the demeanor and attitude of the people behind the counter is downright unfriendly. I have purchased a few things there and it’s always been great quality and I would have bought more but the people who run the store act as if they could care less if you buy from them or not. My questions were met with curt answers and a grim look of, I’ve got better things to do. No hello, no smiles and not even a «thank you for shopping with us» when checking out. A few days ago I was looking online and found another local butcher shop called Royale Meats. Their storefront isn’t as fancy nor is their website but Wow, a complete 180 in the attitude and helpfulness! I was greeted with a hello and a smile from a nice young lady behind the meat counter as soon as I walked in. She offered to help me pick out the best looking cuts, answered a few questions with a smile and when I asked about their jerky, she gave me small samples of each variety. I spent more in this single visit to Royale Meats that I have in several combined with Choice Cuts. She also gave me a flyer with special combo packs that can be purchased and explained that those orders could also be halved. Royale Meats is now my choice of butcher shops in Boise!

Went in to get a nice Ribeye to cook for my birthday. They only had 2 in the counter and both were small. I asked if i could get a bigger steak cut. 1 ¾−2″. the guy told me the ones in the counter are 1 ¼″. I say. yes, I see that, could I get a bigger one cut? He asks me why… I tell him because I WOULDLIKETOBUY A BIGGER steak! He just turns and walks away. A different guy comes over to ask what I would like… He cuts me a nice 2″ thick Ribeye… Then a different guy checks me out. I’m looking at the bacon and ask… Do you smoke your own bacon because I am looking for some good smokey bacon. He says, NO do you want some?. I was completely turned off by these guys. I ALWAYS try to spend my money locally but next time I will drive up the road to costco for my next steaks… never a hassle there… So in the end… One steak $ 22… and a bad experience. Even if the steak is awesome, I will not return. To bad. sorry but complete FAIL!

First of all they have wonderful jerry and pepperoni sticks. This is the only reason I give them 2 stars. While stopping by for some jerry, I decided to get a treat today and bought a couple bacon wrapped beef tenderloins at $ 22/lb. Excited for a great dinner when turning over the filet I noticed a significant amount of fat in the middle of the filet. I have never seen this much fat in a tenderloin Ever in my life. Any idiot would have seen this when wrapping the filet… no way it could have been an accidental oversight, which I’d understand. This was deliberately sold this way. I had to discard OVER Half of the filet. This is unforgivable and I will never buy a cut of meat from this establishment again.

I was hoping to get some good meats, unfortunately I got there 5 min before closing and the shop was already closed with a guy inside looking at me. But he would not open. Hopefully there is another good butcher in Boise who wants to make some business

I’ve tried this place several times, I want to like it, I really do. I think they have some good product, but the service is horrible. I have found them many times to be downright rude. I recently came in looking for a rack of lamb. They pointed at the freezer. I came back and asked if they had any fresh racks, rather than the frozen crown roasts. The woman brought out a white(not see through) vacuum sealed ‘rack’. I ended up buying two. I get them home and unwrap them so I can french them to get ready for cooking. They were NOT racks of lamb, they were t-bones. I spent close to $ 100 for this meat. I asked for racks of lamb, and they sold me t-bone. I will never be back except to tell them about this mistake. Avoid and give your business to a different butcher.

I decided to go to Choice cuts because I needed something different from what I get in your typical cellophane grocery store meat selection. I needed a different cut than what is typical. The guy behind the counter seemed very reluctant to do my order the way I wanted it. After some back and forth, I finally got what I wanted. I think I’ll choose Albertson’s or Fred Meyers for now on. These guys have some quality product but if you’re looking for good service, I’d go elsewhere.

BACKSTORY: Went through college in Oregon, became vegetarian/vegan, Animal Rights! YA!!, moved to Idaho, fell in love with hunting/conservative/carnivore…MEAT. Now that you know my backstory, you can deduct that I know NOTHING about meat(cuts, animals, cooking, etc) and now that I have a wonderful meat eating boyfriend, I have to provide his weekly meat allowance. Me. The vegetarian. The wonderful people at Choice Cuts have saved my booty many times. I literally go in there and say«My boyfriend likes prime rib.» And they pick out the right cut, size, and give me tips on how to cook it. THANKGOD. They have a huge selection of natural meat, including chicken, pork and beef, as well as smoked meats and sausages. READ: No antibiotics, no horomones, grass fed beef. Let me tell you know that I am no longer vegetarian(SURPRISE!). They also carry a large selection of rubs, brines, jerky mix, sauces, etc that are deeelish, and go in there on the right day and they might even give you a sample rib that has been on the barbie for hours. THAT is reason enough to go in there. If you don’t know, now you know. :)
