Came back — had the beef short rib ramen again, and this time it was really harsh. The broth was dark and left a bad after taste.

The ramen is flavorless and inauthentic. Given how many amazing places have opened up in New York – from Ramen Lab to Zundo-ya – this place is a trap for suckers who haven’t tried real ramen. Spicy miso ramen is neither spicy nor miso – the umami is almost totally absent.

Satisfyingly chewy ramen, hearty sea salt broth, and tender dark meat chicken with a little bite from scallions and crunch from bean sprouts and topped with a gooey egg really hit the spot on this rainy night. I’m talking about Ganso’s Tori Shio ramen, which I tried tonight. I was less impressed with the crab shumai; they tasted like fresh crab but not much else and were forgettable. My dining companion agreed, forcing an uneaten half of the shumai she tried upon me as she happily sipped her cold beer. No complaints about the service or ambiance, though. Our server was appropriately attentive, and the caramel-colored wood benches and tables and soft lighting led to an overall pleasant experience. If I were looking for ramen in Brooklyn again, I wouldn’t hesitate to go back. I definitely valued the chewiness of the ramen over some of the more forgettable noodles I’d had at Naruto in Park Slope and also better in texture than the ones I waited in line for at Totto Ramen in Midtown. Definitely a solid dinner experience. But don’t get the shumai.

Ramen was very good and prices are fair. The pork buns were good but not my favorite. The crab shumai was not good, too fishy tasting and salty. Service was good and no wait on a Saturday night. $ 6 beer on tap is not bad either. I would go back.

I came here around 6:30 pm on a Monday with a friend. We ordered the short rib and spicy miso ramen. OVERALL: Ganso is decent. The ramen definitely tastes somewhat American, especially the obvious«fusion» items. The prices are fair. SERVICE: Our server was very helpful, told us the daily special/seasonal vegetable right away. Waters were refilled quickly and we weren’t ever bothered in any way. We were basically the only ones eating and our ramen took about 15 minutes to arrive. A fair wait, IMO. [4.5/5] ROOM: Good looking room, nice open kitchen with glass windows. Bar seating and booths are available. Nice décor, sake bottle display, and utensils were stored in cool bamboo holders. Looked every bit the part [5/5] FOOD: We had the short rib and spicy miso ramen. Short rib was tender but to be honest, the broth didn’t taste very japanese. The spicy miso– my friend remarked that it tasted neither of spice or miso. The pork belly was very tender though. Portions were reasonably sized. The broths were good, but I wasn’t compelled to finish all of it. The scallion on top was cut somewhat shaggily — either this was intentional or someone in the kitchen may need to run an edge across a stone. [4/5] VALUE: All the ramens were around $ 15. Based on the quantity and quality of the food, I would say this is fitting. Not a great value, but you’re not getting ripped off either. So it’s a fit. [4/5]

I got their vegetarian ramen ‘Yasai’. It had a delicious shiitake soy milk broth. It was rich and delicious but didn’t feel heavy– perfect for a summer day. I also added Rayu Shrimp for a little spicy kick. My sister got their cold ramen noodles ‘Hiyashi Chuka’. The noodles were perfectly al dente. The yuzu sauce was delicious. And the snap peas added a nice crunch and sweetness. Again, perfect for a hot day. Definitely would recommend you come by.

Go the spicy miso ramen, Hiyashi Chuka and chicken wings. The Spicy Miso was just okay. The soup was a little thin and without the typical richness. The Hiyashi Chuka, cold ramen had the hardest noodles. They were more than traditional al dente. The best thing is the chicken wings. They were crispy and the sauce was very flavorful. With the cost about $ 16 per ramen, I felt the cost didn’t coincide with the flavors. I think I would’ve been more satisfied if it was $ 10 per ramen.

Fresh made to order ramen with quality ingredients and thoughtful preparation. I have dined at the restaurant and ordered to go. Both experiences were great. The dine in service was amazing our waiter(who’s name escapes me) was very attentive knew about the menu and gave us great suggestions. When I ordered to go I thought I would be cheated out of the healthy portion but NOPE they separated the broth, veggies, short ribs and noodles individually so that I could mix and layer it when I got home. My only con is o wish they added a little more salt but you can always use soy. They’re a little pricey but definitely worth it. I will become a regular

Location: 2.5÷5 Located in downtown Brooklyn, Ganso is the only Japanese styled ramen restaurant in this area. However, it is sort of tucked away to the corner. Atmosphere: 4⁄5 The restaurant is dimly lit and is very clean. It’s not too big, not too small. Service: 4⁄5 The waiters are excellent. They have good manners, refill your water quickly, and asks you if you want more(costs extra). I have no problem with the service. Food: 3.5÷5 The most important part of this review. The food, for a restaurant charging at LEAST15 $ for a bowl of ramen that’s not in Manhattan, is not not as good as you’d hope. Don’t get me wrong. It tasted good. However, I feel that it is one step above mediocre. The portions are not that big either. I’ve been here 4 separate times, each time trying a different ramen. Price: $$(15 $+)

Ganso Japanese ramen place was the best experience I ever had. The service was immaculate. It was so suburb and excellent. The people that works their are very friendly and wants to serve with passion. They are very helpful and would give great recommendation on what you prefer. The simple ramen dish I had was a miso soup base with 2 pieces of pork belly, Spinish, piece of nori, half a egg with some yolk to it and slice of scallion. Most of all the noodles wae thin and very good. The miso soup was very refreshing and the pork belly was very tender and nice and fatty. The beer I had was from black hog, it’s a ipa beer that’s called ginga ninja. It was very smooth and it tasted fruity. I would definitely recommend this place to friends or anyone. I would go again with friends. The whole experience was really wonderful.

So perfect on a cold night! Love this place. The chicken broth is amazing, the noodles are cooked to perfection, and the greens were just the right amount. They have a large selection of Japanese beers too which is awesome and it’s super easy to get to right by Atlantic Ave subways. Def recommend.

Ramen noodles in a simple casual setting as it was intended. Good quality food and fast service. I tried the yasai ramen, which consists of soy milk, mushrooms and tofu which was sooo good if you’re into the veggie life. PROTIP: Try the Ramune soda if youre a nerd like me

Went here last night to meet some friends from out of town. The place is super convenient, an 8 minute walk from the Atlantic Terminal. There was five of us so it was a little cramped but as soon as a table opened next to us, our waitress hooked us up with extra table space. The beer menu is fun, i tried a Gingja Ninja and a Scrimshaw Pilsner, both were excellent. Everyone in the group ordered something different from the Ramen options and everyone was pleased! The Crispy Goyza for an appetizer is a must, they were soooo good. Overall a really great place to get down on some Ramen and brews.

Alert: Vegetarian Review. So the Vegetarian Ramen was fine. Fine being a euphemism for not a lot of taste but I could stomach it. In order to actually *taste* the bland broth I had to add copious amounts of red chili oil sauce. If you want to give your vegetarian palate justice, I suggest you head to Samurai Papa in Brooklyn OR Soba-Ya in the E. Village for vegetarian or vegan Japanese noodle broths with layers, nuance and most importantly, FLAVOR.

Hidden deep in Downtown Brooklyn, I was actually surprised. Surprised that there was a ramen joint here, of all places. If you know Fulton Mall, you know that if you get hungry after bargain hunting/shopping, Shake Shack and Junior’s are as good as it’s gonna get. I’ve come here a few times, and I will say that their noodles are thicker than I’m used to but I don’t care! Still tasty and filling. I read through these reviews and I noticed a trend in complaining about«saltiness». Whenever I decide I’m going to have ramen, I prep myself for the unhealthy serving of sodium I’m about to consume. RAMENISTYPICALLYMADEWITHPLENTYOFSALT. I’m not Japanese and I know that. I love it, too. They have a good selection of beer on the menu if you’re into that like I am. It’s also really cute inside. It’s very clean and welcoming. I strongly recommend the short rib ramen. The beef is always prepared really well and the broth is not as thin as people seem to have complained about. It’s addicting. Although admittedly it’s not my first choice for ramen(mostly because of the pricing and something about the egg bothers me), it’s a solid place to bring a group of friends and sip.

Nice drink selection and some solid ramen, we tried two of each and enjoyed both(plus an assortment of 3 standard Mt. Fuji mochi ice creams to finish), seated at the counter right near the back along the kitchen which you can’t quite see in. Warm spicy miso soup packed with pork belly, soft boiled egg, and lots of Ramen. l love the warmth, customer service, and yes the Ramen noodles are truthful, and the snug atmosphere is just as inviting and spicy as the broth that this Ramen is swimming in right about now. Please do not leave until you had the wings. Seriously get thr wings. In fact demand the wings. They are thick with love and sticky warmthness disguised as sauce. Did I tell you about dem wings? The music is sexy and the wait staff is overtly happy and upbeat. I seriouly avoid this spot on the weekends, Saturdays and toddlers throwing ramen do not mix well with me. This place is a family spot on weekends, hipsters with beards and babies are eveywhere… however there is a sexy bar, tune the sticky face toddler out… or do as I do Monday thru Friday only… what are you waiting for… go! Alcohol is available. Go. Now. Get. The. Wings.

Ganso, a very modern and retro kind of ramen restaurant. The décor is very clean and bright, even though the lighting is very dim. The staff are attentive and quick which matches perfectly well with a ramen bar ambiance. My boyfriend and I sat in the booth area, very spacious, even for four people. We ordered the Fried Chicken and the Short Rib Buns for starters and moved on to the Spicy Miso Ramen and Tori Shio Ramen. The buns were a bit disappointing, there wasn’t much flavor in any part of the bun; short rib was cooked nicely and was tender but the miso-glaze was weak and there was too much scallions. The fried chicken was good, a little heavy on the salt but when it’s dipped in the yuzu-mayo, the flavors worked with each other and toned down the saltiness, which in the end is worth ordering — just wished there were more pieces in an order. The ramen was good, noodles might need a little more work, had a bit of a starchy dough-y taste but the Tori Shio broth tasted very clean which is perfect for anyone that’s sick. The Spicy Miso was unique, it wasn’t just miso broth with the chili oil but instead, the chilis were grounded and mixed in with the miso paste; the marriage of flavors were excellent and hit the spot. Pork belly were fatty but didn’t have the grill mark or crunch, egg was perfect with the runny egg yolk. Overall, will visit Ganso again. I mean, what’s better than having ramen with Japanese crafted beer?

Downtown Brooklyn(and Brooklyn Heights and DUMBO) are severely lacking in ramen options so I was pleased to find Ganso Ramen. I wanted to love this place and even after my 4th visit over the past 2 years I still can’t. The ramen is plated and presented well but then you have a bite and you’re met with surprising and underwhelming mediocrity. The noodles which are not handmade are still a little too firm to be considered al dente. Could be cooked more thoroughly. The thin broth of the Ganso ramen($ 14) was more warm than hot. The broth is kept in large vats and probably at a low simmer. It was thin both in consistency and flavor. Was salty but not in the umami depth kind of way. The pork belly was generous but the slab was a bit unwieldy and awkward to bite and have it drop and splash into soup. Was okay but could be much more flavorful and succulent– esp for the price. Ganso’s worth a try if you’re in BK and have an immediate craving for ramen but ultimately at the end of the meal you’ll be longing for a bowl that’s got a depth this place has yet to find.
