A few weeks ago, I was doing some errands this morning, when I happened to drive by this truck. I made a point to stop by on my way back home. It’s a brand new food truck. Emily, the owner/chef, just opened for business last week. The Violet Festival was her first customer experience. New, bright green truck — can’t miss it. She was in the process of the last steps before opening on a consistent schedule. Out and about again today with my niece, we noticed the truck’s sign was on. Two picnic tables were added, so there’s room to sit and eat. Chatting with Emily, she’s super friendly and personable. We ordered two Spring Rolls and 8 Potstickers. We had to wait a little longer than usual, but the truck is new, and operated by one woman. First out was the Pork Potstickers. The potstickers are sold individually — $ 2/piece. A side of what tasted soy/teriyaki dipping sauce. They were full of flavor! Hot. Solid consistency. The pork was a delight! As we waited for the second dish, we were given Crab Rangoon to try. A bit too much cream cheese for my tastebuds, but not bad, nonetheless. Want to add that the triangles were filled full, so that’s always a plus for getting your money’s worth. Great crispy fried taste of the wrapping. Oh, and Emily offered us a free bottle of water to compensate for the delay. The truck did not have cooked noodles(for the Spring Rolls), so Egg Rolls it was. They were fantastic! Chicken and veggies. The dough was cooked to a slight crunchiness. Satisfying! I’m excited to try the Steamed Buns and Dumplings, as I’m currently crushing on those! I hope her dishes are as solid as the food I had today!
