Fresh Meat Plus

I was feeling daring to tackle on authentic Japanese ramen one day. The recipe called for pork belly and pork bones. Where on earth would you find pork bones? yeah it’s one of those out of the ordinary things that you need but grocery stores don’t carry because not enough people purchase them. With a quick search on Unilocal I found this. I stopped by but they didn’t have any pork bones. I ended up getting pork belly and got pork bones else where. This is a tiny butcher shop with other small items like sauces for meat, of course. The lady behind the counter was very helpful and friendly. I would recommend this place if you’re looking to buy just any meat. Quality is superb! you will get your money’s worth. USDA approved and no fillers in their meat.

Was there just yesterday. I spoke at greater length with the owner in Korean. Her mother in law usually sits at the table reading her Bible in Korean. Both are very sweet ladies. To clarify, the meat that is used for the short ribs (galbi) is all from cattle less than 18 months old. The rest of the beef is from Black Angus cows that are slaughtered at 30 months. They also completely process pigs on their own and don’t have anyone else do their processing.
She is the main supplier for local KBBQ places like Omi from what I understand. She is the supplier/​purveyor for quite a few others. Most notably, she is becoming one of the first distributors to send Texas cattle to Korea to supply their beef/​pork needs. In Korea, they don’t serve as much red meat as it is very expensive. That is slowly changing due to the family that owns this butcher shop.
Once again, the chadolbegi was great (picked the marbled fatty batch), and will use some of their pork in some traditional way in the next week.
Lastly, they can special order things for you so if you need anything, just let them know. I wondered how a small butcher shop like theirs can set up shop right next to Super H. The quality is indeed better and they offer great customer service. :)

They even have organic grass fed beef and lamb. Beautiful!
