Los Jibertos

Hey Josh please don’t get personal here. We can have different opinions. The fact is they had a lot of infractions which I am not going to name here. They are out of business for a reason… People that live here know what went on. Have a good day!

I have decided, that I miss this Los Jilbertos tremendously, and even though they have been closed for nearly a year now, I am going to go a head and write a review.
Simply put, these were some of the best Tacos I have had since my early developmental years in Southern California. Everything was beautifully seasoned and fresh. Affordable, and they gave you huge, very fair sized portions.
Unfortunately, they were shut down because of the bureaucracy that is the Casper Health Department. And rather than deal with the bullshit that the department wanted them to «fix» — which was apparently fine for the Popeye’s that was there, they decided to hell with it and left town (I guess Mexican families can not afford enough bribery money to keep them happy, like a major franchise could).
Wendy D. is ignorant. If she spent any time finding out, or working in a kitchen in Casper, she would know that the violations were minor (though, there were A LOT of them — Like, it’s the middle of the lunch rush and there’s a greasy rag on the grill, that was just used to clean the grill… You seriously are going to penalize someone for keeping a keep cook station?)

If you were drive to Mexico, stop at a home, and had dinner this is what the food tastes like at Los Jibertos. The best «al pastor» pork I have had this side of the border. It is a basic atmosphere with the concentration on great food!

Not your typical fast food Mexican Food. If you want a taco try the Carne Asada taco; this is one good taco, real pieces of beef with a lot of flavor. They also have great breakfast burritos. The food is fresh, atmosphere is decent, and prices aren’t bad. They have both dine in and take-​out.
