Wild Bill’s BBQ is a quaint little roadside stand with a handful of picnic tables and a few gravel parking spots. It’s on a country road and it’s very easy to drive past and miss it completely. I wish they could turn this in to a BBQ roadblock as no one should ever pass this place without stopping in! I went recently for lunch with a few co-workers. Unsure of when they would close for the season we had to try this BBQ while we could. It was good to see them still doing steady business in the middle of October. We all grabbed Wild Bill Sandwiches which came as pulled pork or brisket. I don’t think you can choose wrong, but I’m a brisket fan. They came dressed with coleslaw, pickles, jalapeños, onion, and chipotle hot sauce. We all ended up turning to fork and knife as the loads of tender meat and toppings overwhelmed the roll. When paired with some beans and mac & cheese you can’t go wrong. Just be warned that the peppers and hot sauce might make you sweat!

Best bbq of any place in wny. The pulled pork is out of this world. You can eat it with out sauce like he tells you to try first, but his homemade bbq sauce is so good! The sides he offers are all great too. Wild Bill is one of the most personable people you’ll meet in this area. He should serve ribs I know they’d be the best just like everything else on the menu.

Not really sure what the big fuss is about here. Everyone seems to give 5 stars but I didn’t see it. The corn and mac and cheese were really good – I’ll give them that. But the BBQ wasn’t good. Vinegar in the sauce was way too much and the smoke on the meat didn’t come through at all. The pulled pork was pulled way too much and it was more the consistency of a sloppy joe than pulled pork. Also, the roll soaked everything up and then pretty much disintegrated. If you’re driving by it’s an okay stop but I wouldn’t go out of my way to go there. I would go to Kentucky Greg’s, Dinosaur and even Wegman’s first.

I have to say I disagree with most of the reviews on Wild Bills. I think a lot of people are caught up in the kitsch of having a roadside BBQ stand. First the good. The cajun corn side dish is very good. A good mix of spice with enough heat to notice but not to overpower the flavor of the corn. Now the not so good. I have to say I was pretty disappointed in the food overall. I opted for the BBQ chicken sandwich. I thought it was really lacking in flavor. I expect slow cooked chicken to have a decent amount of smoke flavor. This chicken was very bland. It tasted like a plain piece of chicken that was thrown in the smoker. There was no seasoning to speak of. The roll it came on was a grocery store kaiser roll that was completely soggy the minute I sat down. They would be better served to have a more dense roll to absorb the liquid.

Awesome one-man gig in the middle of nowhere. Of course, I had to get the«Wild Bill Sandwich» which was delicious– juicy pulled pork, spicy jalapenos, onions, and other goodness with a scrumptious bbq sauce slathered all over. Really hit the spot along with the Bud Lite Limes we had with it! Don’t let the gravel parking lot and the bare country road scare you. This really is a solid bbq joint that you won’t regret driving a little ways to get to.

If you slept with Prince William and he went crazy on you(Heart style) and gave you lovebites all over your neck, then they would be called«Wild Bill Hickeys». OK, that was dumb. What to get: Wild Bill Sandwich Oh my goodness! Has someone been reading my Unilocal reviews from other cities and decided to just go all out to make me happy? Opening a BBQ truck near my house? Are you serious? I don’t know where Wild Bill intends to get his business from, this is literally in the middle of nowhere on a little farm, a little patch of grass out on County Road, a road that most Buffalonians have never, and will never, drive down. And yet, somehow, he’s lasted all summer, and without me even knowing he was there… until now! So far I’ve only tried his«Wild Bill» sandwich and it was absolutely magnificent! Loaded full of smoked pulled pork that tasted great, delicious homemade slaw, fiery jalapenos and relish, and the best mac and cheese this side of the 38th Parallel(no meaning to that statement), this place really takes the cake. Right off the wedding table. And puts it somewhere safe. It’s literally awesome. I actually think I will go back today(today being when I wrote this, not when I posted it), and try something else. Maybe a couple of things. Prices are great, tastes are great, it doesn’t get much better than Wild Bill Hickory. Finally, the palace that is Kentucky Gregs, the best BBQ in the region by far, has some competition! I know he probably won’t be year-round but I wish he was because he is… that… damn… good. Nom nom nom. Nom. Nom. Nom. Just watch out for Prince William. His sex is on fire.
