Best BBQ I’ve eaten in my life. Can’t think of a better place to go for BBQ in the whole east coast. Can’t stop going back here I’ve tried pretty much everything on the menu, nothing has and ever will disappoint me. My recommendations would be the brisket and ribs, so tender and moist, full of tasteful flavors. Chicken and sausages are other good options as well On top of that the owners and staff are very nice people and give excellent service. Do yourself a favor and give this a try, you won’t stop coming back

Everything they make is freakin delicious. Great place to hang out with friends. The owners are great to talk with and you can tell they take a lot of pride in what they do. I told myself I would only get it once a month then i was up to once every two weeks. Now I’m there once a week. This place is a highly recommended place to go for some good BBQ and more. I expect this place will be on Diners Drive-ins and dives on food network someday.

Round Up smells amazing and tastes even better. My friends and I hit this spot up after a hike and we feasted. My boyfriend and I got the ¼ pound brisket with a side of fried okra(which I ended up not sharing because it was so good lol), chilli, which had mac ‘n cheese underneath it, a side of ranch style black beans, a side of garlic mashed potatoes, a side of fried green beans, a basket of cornbread, an order of «green stuff»(marshmallows and pineapples in Cool Whip, apparently a Southern delicacy), and a hot dog with brisket on it in a bun for dirt cheap(like $ 30). Literally everything was super amazing. The owner came and checked on us twice. It’s also really cozy and warm and has a hardcore Southern feel to it. We didn’t want to leave!

Everything about this place is fantastic. The overall layout and vibe is very unique — you order food inside and have the option to eat at picnic tables under tents outside when weather permits. They also have an indoor seating area with plenty of hot sauce options available. The portions are generous, the quality of the meats top-notch and the staff running the place are super nice. There’s really nothing else you could ask for in a BBQ joint. The owner walks around to chat people up and has a genuine interest in the food he’s serving you. First-time visit. We thoroughly enjoyed Round Up Texas Smoked BBQ, and plan to return. Located just south of Route 301 on Route 9. Open daily, lunch and dinner, except Mondays. As others have said, ignore the lack of décor, outside and in. Chose ½lbs of marbled Brisket with two sides of your choosing, and a Brisket Sandwich, plus cornbread and a fine brewski from Captain Lawrence. All excellent. Wine also offered. Bill, the owner, welcomed us personally. Next visit will sample the Dino ribs at Bill’s recommendation. Meats smoked on premises. Small Gripes: No draught beer, and gravel parking lot that could be sloppy in bad weather. Bill said they have plans to build an adjoining bar. Best wishes. Alert: 3 – 4 miles/10 mins east of downtown Cold Spring.

I type this with smoky fingertips. Eight hours and two hand washings later, my hands still smell like the ribs. I’m still tasting it, too. But I don’t mind. This place was great. Wife and I ordered the brisket, ribs, mac & cheese, coleslaw and cornbread. The ribs are the thing, man, they are so good. So smoky and tender. I’m usually not a ribs guy, either. But I was sad when I finished my portion. The marbled brisket was good, but needed the sauce. My portion was a touch dry. The sauce though. Oh man. The mac & cheese had some jalapenos thrown in for some variety. The cornbread was moist. Add a Shiner Bock on the side and that is one great lunch. Ideally eaten after one of the many strenuous hikes in the area(we had just done Breakneck Ridge). I’m a big fan of Cold Spring in general, and wouldn’t have guessed that the best restaurant was outside of downtown. I’ll be back next time I’m in town.

For most people reading this, this spot is a tough sell, simply because it’s likely far away from wherever you live and because it’s seemingly in the middle of nowhere… which it really is. If, however, you can get past this obstacle, be prepared to experience some of the best, if not the best, BBQ you can get in all of New York. Yes, it’s that great. I’ve been to Round Up twice now, nearly a year apart, and both times I’ve had a similar, incredulous reactions to the sheer flavor and«authenticity» of its BBQ and smoking skills. As I’ve mentioned in previous reviews, due to my frequenting of the South, particularly NC, I feel as if I know something about BBQ, and of all the places I’ve been to in the northeast, this place just«gets it». Their menu is vast, so if you do decide to make the trip, the«must haves» are their smoked, dry-rubbed ribs and chicken, both of which basically fall off the bone, as well as their exceptional marbled brisket, and housemade sausage. All of their sides are spectacular, namely their mac ‘n cheese, which is super creamy and mildly spicy due to the addition of mild jalapeños cooked in, as well as their beans(vegetarian, if you can believe it), crispy coleslaw, fried okra, and potato salad. They also have a Texas-inspired beer list, which features several versions of Shiner. I really don’t know what else to say. Hit the road for what will be an unforgettable meal.

Exactly what we wanted. Took a nice drive up the Hudson from the city & stumbled upon this gem. Brisket was juicy and ribs were fall off the bone delicious. Bill was friendly, helpful and even brought out some brisket for our dog! Definitely recommend and will be back. Cheers!

Wow! I just had my fist visit. Service was super fast, the food reasonably priced for the amount, and it was all fresh and tasted great! I highly recommend a visit to anyone. My dish was the sampler plate. Nothing wrong with a taste of everything on your first trip. If I lived closer, this would become a regular stop for their $ 4.99 lunch special.

Amazing authentic Texas BBQ. The hot sausage is perfectly done and the esker is smoked on site and is so tender it flacks apart. I recommend this place to anyone who loves good BBQ.

Pure BBQ gluttony, in the best possible way. Split a multi-meat sampler(especially the brisket & ribs) with someone to get as much as possible. The mac & cheese has just the tiniest hint of jalapeño and the potato salad is utterly amazing.

BBQ at its best in NY State. Yummy and delicious pieces of delicately charred morsels of Meat(s): brisket, sausage, Dino short ribs, chicken, and pork ribs. The brisket was my favorite — fall of the bone tenderness. The sides were also respectfully and equally delicious. They definitely held their own against the carnivorous smokestacks of animal protein. Mac n’ cheese, fried orca, fried green beans, garlic mashed potatoes. You know I’ll be back. Yums!

Thanks to Unilocal.We enjoyed our combo order, a catfish sandwich and BBQ wings. Each order has its unique flavor that is right of the bone. The owner is nice walks to each table asking how everything is. A bit pricy but worthy of it.

We found this gem after a grueling warm hike @breakneck and have been back every chance we get. Try everything!!! It is all smoky, delicious and prepared with great care and love. My mouth is watering thinking about the Mac and cheese with a hint of jalapeño combined with the brisket chilli… lip smacking good! I cannot wait to taste those delicious ribs. The service is friendly and they make you feel at home.

Now talk about sum’ serious grub!!! We have been to many BBQ places and I will say that this takes the lead in the Tri-State Area – worth the drive on all facets… tastes, portions, and price! Their ribs are dry rub but the meat is like no other place I have ever been and the sauce, they hit it right on the nail… DANG cowboy!!! They offer your typical porky-pig extravaganza and then some fish and chicken! Can’t say I tried the either yet but, they offer it. The brisket was sensational and the mac & cheese was probably one of the best ones I had – probably not to a child’s delight given the jalapeños but they can be segregated these crazy hot green creatures. The beans were amazing and the garlic mashed potatoes were pretty good but definitely not the caliber of the other two. The Dino Short rib is something that I have never seen! Visually it is a crowd pleasure in all aspects from visual contingency to palatable consumption. The Wrangler pie, which we discovered upon our departure, yes, I do mean after we were done eating and stuffed, was purchased and doggie bagged to be tried the following day, but the aroma so permeated our trailblazer that we hypnotically had to try this when we got home and quickly cased the entire thing – their version of Shepherd’s Pie with garlic mashed potatoes with their ever-so-flavorful brisket topped with cheddar cheese, bacon bits then accented with some fritos – a true Lipitor Fancy that your cardiologist would envy you for! Simply outrageous(yes, the mashed potatoes made their claim to fame in this dish!) Nice selection on the menu with great prices and a few sauces to choose from with lots of hot sauces to drown yourself in. This place is not waitress service but rather order at the counter and grab a picnic table. Very small venue but does resemble your typical Texan place – literally you look at it from the outside and you are petrified until you slightly open the door to your car and you smell the aroma of this Route 9 mecca! Again, make sure not to judge a book by its cover – this place is a dream come true and on my list of «last meals». I seriously feel terrible for all kosher and vegan eating friends – you should really declare just for one day off and make this mandatory, just once. They offer beer and soda and on the weekends, they have a live band… take out is non-stop here and it comes as no surprise. The proprietor mans the grounds at this place and he is ever so attentive to his clients – a great gem in the hudson valley area.

True Texas BBQ in the Middle on Nowhere? Sure, sign me up. Was passing by on the way back to NY from a trip upstate and got an early dinner here. Enjoyed the fresh air and the live band and beer garden they had outside. Go the marbled brisket, spicy sausage, and ribs for the meats and mac and cheese, coleslaw, and beans for the sides. The meats were perfect, the sides were a bit spicy and not in a good way. But overall a very good meal. For a second I forgot that I was even in the state of NY.

Wow this joint is definitely worth visiting. The food is so dang delicious that I am still thinking about it and drooling over going back and sinking my teeth into their offered meats. We parked in the lot and went inside the little house looking place, went up to the small window and ordered our food. The staff were friendly and so happy. There must be something joyful about providing delicious food to tourists and locals hah. You order the food and you have to tell them if you’re looking to sit outside or in that little dining area. FYI there’s no running toilet in this place. Its probably best to go do your business elsewhere, but there are portapotties that are supremely clean and hygienic that you won’t feel gross eating your your hands. Believe me, you’ll need your hands and be able to lick all the flavor off them. Make sure you don’t bite your fingers too when you have their special BBQ sauce on them. We ordered brisket and it was amazing. It was buttery and just right enough meat cooked to perfection. I thought I wouldn’t be full so I ordered more brisket and some chili fries. The chili fries were awesome because you have real pieces of meat in it. The ribs were also tasty, but i liked the brisket more. The Mac and cheese is only ok but I definitely recommend the mashed potatoes. They are fluffy and topped with the delicious meaty tasting gravy sauce. I wish we had this kind of food in NYC. None of the meats or sides were dry and they were all so flavorful, they are not greedy with their spices. When we were sitting outside, there was also a bike gang that came by and basically took over the place. Hah! I love it. You wouldn’t have that happen in Manhattan. definitely come here, if you’re in the area!!! Its def a game changer in BBQ.

We went here tonight with friends. Best BBQ in the Hudson Valley! I ordered the brisket sandwich with Mac n cheese. My husband ordered the chicken and brisket combo with cole slaw, corn bread, and mac n cheese — it was delicious! The owner approached our table towards the end of our meal and was very hospitable. Very down to earth gentlemen —The staff was friendly and we were able to sit outside and enjoy the weather. For anyone looking for a laid back atmosphere with friends and family while having the best BBQ — this is the place!!!
