Do yourself a favor and go somewhere else. I brought a good size 8 point buck here to be processed and requested steaks from the backstrap and the remainder of the meat to be proportioned into 50% ground, 25% chorizo and 25% sausage. I gave them approximately 7 pounds of back strap/tenderloin when I dropped off the deer. When I unpacked the box of meat at home I had 1.4 pounds of backstrap, and 50% chorizo, 25% ground, and 25% sausage. When I called the owner to clear up the confusion he said that with the backstrap«they have to trim it.» Wow, 6 pounds of trimmed lean backstrap… really? Then the worst part… he asked me to bring the meat back so that he can«give me the correct proportions.» So I logically asked if he was going to give me somebody else’s deer then. No reply… so I then asked if the deer I was given was my deer. Of course he quickly said it was but considering his eagerness to return the meat he had already given me so that he could«give me the correct proportion» I am naturally a little skeptical. I will never go to the Apache Meat Market again.
