This restaurant is a gem! At the end of our skiing trip@Vail and on our way to Eagle airport, we stopped by this cozy and unassuming place for lunch. We ordered truffle fries, mushroom soup, crab cakes and shrimp Alfredo. All of our dishes were just delicious! They are refined and have top-restaurant quality. The owner Tom was very hospitable and welcoming. We will go back if we are ever in this area again.

My husband and I just adore this place! It’s a cozy little place with lots of spunk! Our favorite is the tempura shrimp, amazing! The staff, owner and his son have always been super friendly and accommodating. Our favorite restaurant in Eagle for sure!

I had hoped my recent visit was an off night, but it mimicked the first visit. I will not be back, the mistakes were unforgivable. You cannot serve the wrong food and charge a customer. Tried to have celebratory meal with a group and ordered just about everything on the menu. The glaring holes in presentation and quality was disappointing. Sad too — it could be a real gem.

My husband and I went here for our anniversary dinner and it was great! Ambience was nice, our server Emma was wonderful, and food was yummy! I had the scallops and hubby had the sirloin. Both were very good. Try the Tillia red, also! Paired perfect with my seafood dish! All in all, very nice experience. Definitely will be dining here again!

This was an amazing little find, nestled in a residential area, it had a very cozy feel. We sat outside under pretty lights. The food was amazing and the owner was so friendly and helpful, one of the nicest people I’ve met. He even made us a special dessert for«finding the place.» We felt so welcome and happy. Delicious and relaxing. Frank Sinatra was playing & everything felt magical & perfect.

After beginning a terrifying voyage from Gypsum to Vail in a full-force blizzard that made the dark nighttime conditions + driving snow make my windshield view exactly like«light speed» a la Star Wars, we decided to find something closer and not die in search for a good meal. The next place we tried closed early due to the storm, and by the time we arrived at Paradigms, it was nearly 9:00 pm, but the owner graciously welcomed us and made sure we knew it was absolutely no inconvenience and that they would be happy to accommodate. The service is terrific, friendly, and prompt. We were pleased with the wine selection, and the food was great. With a group of 4, we tried the tempura mushrooms, «naughty» truffle fries(delicious), crab cakes(YUM), and the jalapenos. The guys all had lamb which was phenomenal, and I had a cajun shrimp pasta dish which was pretty good as well. We shared desserts and tried the peanut butter truffle pie(noms), bananas foster, and bread pudding. All in all a good experience, and again, the service made the entire event a good time.

First off, my go-to restaurant in Eagle the last couple years has been Pastatively, so when Paradigms was recommended as «at least as good», I somewhat reservedly decided to skip a place I love and seldom get to enjoy to try something new. I’m so glad I did! The atmosphere was warm, comfortable and quiet. I chose a table near the fireplace. I felt a little under-dressed in a hooded sweatshirt(it was a ski weekend for me and wasn’t planning on treating myself to a nicer dinner), but I never felt uncomfortable. The atmosphere is classy without feeling stuffy. However I would say most diners were dressed up at least a little. Really, had I worn almost any other shirt(besides a t-shirt), I would have felt like I fit in. I was impressed with the menu, featuring what appeared to be quality ingredients in thoughtful preparations. Think upscale American Grill fare. Most entrees were priced right around $ 20 – 22 from what I recall and seemed very fairly priced. I ended up ordering the night’s special of Duck Breast over a risotto with broccoli and carrots. I was told the Chef recommended the duck prepared medium. I rarely go against the chef’s recommendation, but I asked for medium-rare. The chef absolutely nailed it. Amazingly cooked and the presentation was wonderful. I also added a single serving salad, appetizer(Tempura Mushrooms) and Dessert for $ 9. They allowed me to substitute the dessert for a few dollars more and I opted for their Bread Pudding — also fantastic! I topped the evening off with a glass of Tawny Port. If there was one thing I could criticize(and really, I wouldn’t) it would be the limited choices in wines by the glass. There were 4 reds and I think 4 or 5 whites. The reds available were Merlot, Cabernet Sauvignon, Pinot Noir and I think Zinfandel. I also think about 1⁄3 of the wines were from Fat Bastard. So not exactly unique, but at a max price of $ 7 per glass, they were priced fairly and still good. The service was excellent: attentive, helpful, never intrusive. Paradigms is now just one more reason for me to stay in Eagle on weekends I ski Beaver Creek.

Food = mediocre at best. Dry, over cooked scallops.(4 small scallpos for $ 24??) Service = service was actually pretty good given that he had to come back and inform me twice that the didn’t have the wine I ordered or the beer. Here is why I will never go back… Upon recieving the check I reviewed it and noticed that I was being charged $ 25 for the scallops. I knew the menu listed them at $ 24 so I thought I would point that out to the owner since he was behind the bar. Well, to my dismay, he looked at me like I was crazy, took offense, and proceeded to tell me that I was making a big deal about nothing, its just a dollar! So we left, paying $ 25 for scallops listed as $ 24. The completely embarrassed server then followed us outside to apologize for the owners behavior.

I really really hate to hate on the little guy in a small town… Having grown up in a small town, I know how people love their local restaurants. Paradigms tries to do the fancy upscale eatery in the town that has a saloon, two coffee shops, and some small low key restaurants. I’ve been to Eagle a handful of times and have given Paradigm’s a chance… twice. Twice now, I have found hair in my food. No, it was not mine. Twice, I have been unimpressed by the service. This past time, my husband asked what type of beer was on tap. She listed a few then as she got to the end of the line, forgot them. Instead of quickly checking, it was«Is there anything you want from those, or do you want me to go figure out what the last two are?» Of course we want to know the full selection — that’s why we asked. Bread = forgotten, not as if that is a huge deal, but our meal took long enough that we were getting hungry. My husband’s roast beef sandwich(off the bar menu) was less than stellar — fully cooked, all the way through, until it was brown, dry, rubbery — and mustard-less. He had to dip it in ketchup… One saving feature of the meal was the Larkburger-esque french fries… Parmesan and truffle oil always make for good fries. My fish taco was decent enough, although it was more like a fish quesadilla as it was the size of a dinner plate. I feel terrible writing this review, but as an avid Unilocaler, I’m inclined to write about the good, the bad, and the flavorless. Maybe we just hit it on two off nights… I’m sure that the owners/servers want it to be an awesome experience, we just haven’t had it yet.

I am adding myself to the list of folks who LOVE Paradigms. Between the adorable settings, the fabulously cute owner, the friendly staff, and the creative, delicious, seasonal food — Paradigms is a definite must if you are in the Vail/Eagle area. Oh and they have gluten-free options for vegetarians and they are willing to accommodate if necessary =) The parsnip pappardelle is unique and tasty(I personally would have used a tad less dried tomatoes but other than that — it was perfect). My fiancé devoured his fish taco(it is one large taco with a lot of flavors) and helped me finish off our excellent evening by sharing the chocolate torte with me(all gluten-free of course). And once again, I have found a fabulous spot using my trusty Unilocal! Love!

Inventive, great service, and wonderful atmosphere. The play on food is great here – the parsnip papardelle is thinly shaved papardelle that acts like the pasta which is in a delicious truffle broth. Beef carpaccio, lamb shank, panko crusted chicken, chocolate cake, all winners! Wine list was very reasonable too, and the atmosphere is great – i felt like I was dining in someone’s cozy house in the mountains! I would definitely check it out again.

Was visiting my brother in Eagle and needed a restaurant for Thanksgiving dinner! We had a fabulous meal! First the wine, try the Plowbuster Pinot, so yummy and smooth, it went perfect with the turkey! The bread you get comes with this amazing garlic infused olive oil for dipping… we demolished that in a few minutes! All in all, a great place for dinner!
