This is excellent value and I love the quality of the food. The chef is an award winner. I hope you can try the waffles with berries because they are a real treat whether as breakfast or dessert. Hash browns! Lamb chops are especially tasty and the beet salad nice with most entrees. Ending with the truffle is no small thing. A clean, relaxing and pretty atmosphere which lends itself to any type of occasion. They really know their wines.

Bistro Colorado is the best place to eat in Evergreen. Travis put’s his heart in every meal. Last night we had amazing Halibut and Salad Nicoise which was a true as can be to getting one in France. The menu gives you lots of choices, and they have a great wine and beer selection as well. Travis made a personal visit to us to make sure everything was wonderful, and the waiter also named Travis spent great personal time with us as well.

Came here for brunch with a girlfriend after a hike. Needed a dog friendly place so options were limited. So glad we ended here. Fantastic service, delicious food and great wine recommendations. Definitely will be back here. Hopefully for dinner sometime.

Travis, the chef, changed the menu recently and it is awesome. He has reinvigorated his restaurant!!; We ate here tonight and had the cheese plate, salads, veg pasta and crab cakes and it was awesome! I am veg and my wife eats chicken and seafood. Everything we had was excellent! We also have eat brunch here and again, awesome. Try a ‘table’ french toast with your eggs bene or omelet… wow! I eat at restaurants all over the world and this one is really very good. Something you would not expect in a little mountain town. Enjoy!

Made reservations well over a month in advance. When we arrived, there was a party of at least 30, but only one server. The party was very loud, and we could barely hear each other at our own table. I ordered the«BLT» Benedict. I asked for the eggs to be poached med well. They came out barely cooked at all. Not to mention that it took 30 minutes to get our meal. The server never checked on us after she served us our food(not really her fault due to the large group). They should have had at least one more person to serve the larger party, so that the rest of the tables didn’t suffer. We had to get up and ask the server for the check. Don’t think I will be back.

We tried this restaurant out on a whim after driving by several times, and we are so glad we did! The atmosphere was very pleasant and quiet, and the food was absolutely wonderful. The beer and wine selection was ample and showcased a wide variety as well. Our server was polite and attentive. All in all, it was a great meal. We had the jumbo crab cake, the quinoa-vegetable medley, and the chicken with pasta and tomato/caper sauce. The chicken and pasta dish was also available with Alfredo sauce, but we opted for the tomato/caper sauce, which turned out to be a much lighter option with a very interesting tang and saltiness to it. All three dishes were wonderful, and we would all happily return and eat any of the three choices again. The portions were perfect — maybe slightly on the small side versus many of the other restaurants in Evergreen, but we all left feeling full and comfortable. The menu at first seemed a little pricy, but the quality of the dishes made it well worth it. In comparison with other restaurants in the Evergreen area that have similarly priced menus, we felt the quality here was equal if not higher. If you’re at all hesitant to go here because Unilocal has this The Bistro Colorado labeled as «gluten free» and«vegetarian,» don’t be! It provides plenty of options for both of those diets, but is in no way restricted to them. We were offered gluten free pasta as an option, but chose regular pasta instead. We absolutely plan to return here soon, and will probably bring friends when we do!

This place is really great! The food was prepared expertly and with lots of care. I asked for a meal that had no animal products or animal byproducts and the chef made me an amazing breakfast burrito with peppers, a chile, onions, spinach, and this savory salsa on top. I was highly anticipating my Mother’s Day visit to Bistro Coloardo as I thought the food was Farm to Table fresh as the ad stated that I received in the mail. It was not. The items on the buffet were over done as they had been sitting quite awhile. I am in the dining and hospitality industry so I know that buffet food must be rotated. The food was not flavorful. The only thing that was fresh was my husband’s omelette and that was very mediocre. There were no labels on the buffet items, so I did not know what anything was. It was highly overpriced at $ 35 per person. The buffet was definitely not worth that price. The owner or manager needs to get on the ball right away or this place will be just one more Evergreen restaurant casualty. Upon arrival, we were not greeted in a welcoming manner. It was almost as if the chef? in a white outfit at the door was put out when we arrived. It was 2:30 and he did not appear to want to deal with people any longer. The first thing I saw was a very dirty and messy cheese and dessert table. Could the tablecloth at least have been changed to make it look more appetizing? The employees were eating at a big table right inside the door which was not inviting. We sat down and even though at that time it was not busy any longer, no one greeted us for quite awhile or asked us what we would like to drink. The shrimp on ice was different. We couldn’t figure out what the strange yellow sauce was on it. However, when it melted on our plate, we realized it was butter, but did not look good when it frozen and coagulated on the ice. Our waiter had to be beckoned for more water, plates to be cleared, as well as our check. There seemed to be enough staff around, but they did not seem to care about good service. They were mainly busy very noisily putting away tables, silverware and glassware. Needless to say, not the ambiance I was looking for to create a relaxing Mother’s Day. There was no music at all, at least that would have covered the din of thire clean up process a bit. Ambiance was non-existent. My friend had attended a brunch and had the same experience, however, I thought I would give it a try. Definitely not a Mother’s Day I will remember.

Darn. This was the first and last visit I will have to Bistro Colorado. We came here for Mother’s Day brunch this morning. We were greeted by a rude hostess and a very crowded, chaotic room. One of the reasons we chose to eat at Bistro Colorado is because they were one of the restaurants that I was under the impression wasn’t doing a buffet. Much to our surprise, the ONLY thing they were doing was buffet. There was nothing on their website about this, which was really disappointing. But, we took it in stride and sat down to eat. They had set up plastic tables and folding chairs for the larger parties. When my mom sat down, her chair almost caved in, as it was broken. We saw another person have the same issue with another flimsy folding chair. After about a 10 minute wait, someone finally came over to get our drink orders. We finally got to the buffet part, which I will say, the food was okay. The beef tips were really tough, but other than that, I can’t really complain about the food– not great selection, though, especially for my vegetarian boyfriend. They kept running out of plates at every table. We had to hunt down a server multiple times to restock plates(by this point, they weren’t even busy). Our water glasses and coffee mugs sat empty for much of our meal. They had a lot of staff on hand, and it’s a buffet, how is the service this slow? Literally the only responsibility of the servers is to clear plates and fill drinks. Next, a server dropped a whole plate of glasses right behind my brother and a shard of glass flew up and hit him in the back. I totally understand that accidents happen and people drop dishes. I worked in restaurants for years and can’t even count how many times I dropped dishes. But no one cleaned it up for like 10 minutes and there were multiple children running rampant, what if one slipped and fell on the glass. The worst part was getting the tab. $ 35 for one person for a buffet with little selection, poor service and flimsy folding chairs with no ambience. This price would make sense if the experience hadn’t been so horrific. It was hard to hand over over $ 200 with tip for the experience we had. Sorry Bistro Colorado, but maybe next year stick to your normal menu and don’t try and do a buffet if you can’t handle it.

Well, my partner and I read many of the reviews, good and bad alike, and decided to check the place out. The skinny is this: I couldn’t find one reason to not give it 5 stars. Granted, every restaurant has good and bad days(yet consistency is key in this business), but it seemed quite on point to us. (Review as follows: chef, food, service, atmosphere) The CHEF: I must address this first, however, chefs can be divas! It’s not common knowledge to people who have never worked this industry but it’s often the case. They are passionate about their work, but I don’t think it can excuse being salty and defensive to paying customers(that take their time to post a review). An artist must understand the subjectivity of her craft, even embrace criticism and individuality. It can really turn off would be customers to hear that customers are treated as wrong, and since a percentage of every restaurant’s profit comes from new customers, not only the returning ones, care must be taken to not scare em off. All that said, I could care less how much someone hates me behind my back, assuming it doesn’t affect my experience, and ours was fantastic! The FOOD: A BLT, elk burger, salads, and wine. All of it was really amazing, in freshness, ingredient pairing, and the plating. I think the only thing we did was ask for onion with our salad, which she brought out promptly(partner is onion addict). Although the chips were made out of house, they were good and made a great contrast to my sandwich(texture and flavor). All i drink is water and it tasted filtered, not out the tap. Not too highly priced for quality and appearance either, and certainly worth the money we paid. SERVICE: Almost the best part, I’m surprised to hear anything bad about the service here. Help comes and goes, and I don’t remember our waitress’s name but we were both quite impressed. We went during 3pm, non rush hour, so I don’t know about how their ticket times run but our entrees were out in about 15 minutes(fine because of our salads). The girl serving was friendly, and seemed very accommodating, and while her knowledge of wine wasn’t great(self admitted) she made a recommendation that we both ended up loving. Never was away for more than 5 minutes checking up on us and was all smiles(so much more important than people give credit for). ATMOSPHERE: Clean and cozy we thought. Music was up tempo contemporary jazz and a classy type interior with a surprisingly large space to boot. SUMMARY: Worth a visit. We will try again and if our experience is different I’ll update post. I feel bad for those who had bad experiences, and to recipients of the chef’s scorn. Most people are just not willing to complain about their food chef, instead, they just won’t return. It’s a statistical truth. Unilocal may seem passive aggressive, but is a democratic process. Yes, there are trolls, any restaurant will have a bad review but remember, people don’t like supporting someone they feel is a total grouch(I don’t care) and us publicly snippy with customers. Bake a humble pie and this place will have my 100% support.

I’ve been in a number of times over the past few months, not as often as I would like — but a few times, mostly for business lunches. The food is still absolutely outstanding. The service at lunch has also been very good lately. I struggled with whether to knock a star off of my previous review, because I do love this place, but for me the service at dinner has become a bit of an issue. The last couple of times I have been in the service was slow and somewhat error prone. The waitstaff seems to disappear for long periods of time into the kitchen(all of them) and there doesn’t seem to be anyone that can pick up the slack. Chef T. certainly tries, but it’s obvious he has work to do elsewhere. I think that if Bistro hired a busboy and/or a bartender(Yes, I know, I drink fast!), that would drastically improve the service situation. But man, the food is out of this world. Truly. I really haven’t ever had anything there that wasn’t simply outstanding.

What a fantastic experience! The service was great! Our server was friendly and attentive. The food was absolutely delicious! The food is not too rich, but filled with flavor and high quality ingredients. I had the garden omelette and my mom had the quiche. We both loved our meals and found them to be just the right amount of flavor. They were certainly healthy and delicious. Then we splurged and got champagne and cake, which were also fantastic. We also ate the most delicious chocolate truffles I have ever had!(And that says a lot because I am a big chocolate fan, so I have tried lots of chocolate desserts, but I am also picky and a healthy eater). The atmosphere is also very calming, and we had a very relaxing brunch. I highly recommend Bistro Colorado. Also check out their cooking classes every Wednesday from 4 to 4:30.

We went to Bistro Colorado for dinner. We walked in on a Thursday night, the place was calming. The décor is very Colorado, with paintings of beautiful Aspen trees and mountains. We were sat by our server. He was friendly and polite. We were presented with our menus. The menu represent Colorado with the best of their abilities, Colorado favorite ingredients from field/farm to table. Menu had. Colorado lamb to elk steak, and fresh catch of the day such as scallops, salmon, and more. I am a vegetarian, I ordered gluten free pasta with porcini mushrooms and vegetable medley. My partner had the scallops with mash potatoes and vegetable medley. The food were cooked perfectly! The scallops were seared perfectly, brown on the outside and soft as butter on the inside. The vegetables were fresh and season well. My gluten free pasta were al dente, the mushrooms had so much flavor, every bite of mushroom the umami taste burst into my mouth. We had Colorado palisade pear and ice cream for dessert. Flambé pear with cinnamon and vanilla ice cream it was a sweet endind for the evening. I know some people said that the menu is a little outdated. I don’t care of the menu is outdated. For me when the good is cooked perfectly that’s all it matters. Sometimes with all the culinary innovations, we forgot the basics. Sometimes I prefer simple, perfectly cook meal.

This place was terrible. Went for brunch on a Sunday afternoon. The service was poor, I ran out of water and coffee several times and no one check on me. I was very unhappy with my meal, could barley eat it, and if took the server forever to check on. I had the duck confit hash. It was more like a soup, the plate was full of liquid from what I don’t know. The duck was very salty, the potatoes and onions where not cook all the way. When I think of a hash and poached eggs for breakfast, I think of crunchy potatoes that soak up the egg, not a salty watered down soup. Overall it was an awful experience. Would not recommend. The worst part of it all is that after I placed this review, the chef or owner or whoever comment on it right way. He took the review so personally that he attacked me and tried to make me feel bad for saying anything. What a poor sport, didn’t think he would be so low as to personally insult me like that. But guess it’s easier to blame someone else than except the criticism, pretty immature. He even tried to use my poor review to talk about all the awards he has and how great his restaurant is. What a piece of work. Did give it two stars because they comped my meal cause I didn’t eat it and was unhappy with the service.
