I was introduced to Mouco cheese at the Boulder farmers market earlier in the summer. They had little sample smears(the best way to describe it, really) of their varieties. As a die-hard cheese lover(sorry, veganism wahn waaahn) I tried a few kinds and knew the Ashley would be the one. I don’t remember its specifics… maybe something about vegetable ash on the rind? I just remember I purchased a tiny wheel, and was all excited to share it with The Dude when I got home. However, upon closer inspection some tiny print on the package advised of waiting for certain key dates on the cheese maturity spectrum. As it turns out, August 27 seemed a lot further away back in June when I purchased it than it does today as I’m writing this. I basically forgot about it and oh shucks, now I’ve got to consume a tiny wheel of cheese in a short period of time. The cheese itself has become mellow and creamy; the rind is not too bitter(as it tends to be), and when served on some bread or a cracker you really don’t even notice it’s there. Top it with some homemade zucchini relish, and you’ve basically ruined your dinner with this little«snack». I don’t often splurge on cheese, as it’s very easy to do so and it’s bad for the wallet and the waistline. However, Mouco makes some seriously good cheese, and it’s local! If you’re into it that much, I have seen that they pair with Grant Family Farms, so you could get a share of it once per week. Which seems reasonable, until you try it and realize you’d really like a share once per day…

Found them at the Boulder Farmers Market — took some cheese home for my hubby and he loved it. Although it works out to $ 16 per pound — its nice splurge a little from time to time. Can you put a price on rally good cheese. My husband doesn’t think so.

MouCo. A-go go! Well, I wish you could go and get a tour, ’cause I’d totally take it. But since they don’t offer that yet, do the next best thing and just order some cheese and eat it. You can order online(CO residents — it’s about $ 8 for overnight delivery no matter what quantity you order), or stop by one of the few places that are offering their soft, creamy, and delicious cow’s milk cheeses. Funkwerks Brewery in Fort Collins, Q’s in Boulder, and Palace Arms in Denver, just to name a few. Last weekend I almost singlehandedly ate an entire wheel of the Truffelo, which features black and white truffles. But you can also nosh on the Camembert and ColoRouge, and if you order online there’s an option to get a three-pack. Do I sound like a pusher? It’s really just ’cause I want someone to keep track of my wishlist and buy me cheese. P. S. They offer recipes on their website too!
