The place has a good décor and a relax vibe to it. The staff was friendly and helpful. We came in excited to try a new place that brew their own beer. Unfortunately, they have not produced any yet. Their beer selection is a little limited if you’re not into stouts. Im hoping that when yhey get started producing their own, they would have more variety of beer from pale to dark beers. Kim-cheese fries — the fries was hot and crispy. Has a creamy beer chese sauce that has a very mild taste of both beer and cheese. The fries was also topped with fresh kimchi that gave a subtle kick to it. Although i prefer to have more of the bold taste of a kimchi. Meatballs– the meat balls was served on top of a polenta and red sauce. The serving was good and filling. The turkey meat balls was seasoned well and moist with a nice crisp outer shell. The polenta was creamy and compliments the red sauce very well. Bird and burger– the patty was cooked to medium rare as i asked. It was seasoned well and was moist and juicy. The egg was not over runny and gave a creamy sauce to the burger once you break the yolk. The pickled onions and jalapeño gives a crunch and a spicy-sour kick to counter the sweetness of the bread and meat. Although the brioche bread was very tasty, the bread that was used on my burger was cold and was very obvious the minute i picked the burger off my plate. I am not sure why the bread was cold but it would have been nice to warm the bread a little bit. Overall, the place was good and would be great if they make little adjustments here and there which i anticipate since they’ve been open for only 3 months. I would come back once they start serving their own brewed beers and also to try some of the other food on the menu.

First off parking is kind of a nightmare, I found a spot in some dark ally and parked. This is a very small place and on a Saturday had to wait for sitting which is no big deal. Service was good, they were a bit busy but finally got a seat. The atmosphere is cool and cozy. My thought would be to loose the foozeball table that nobody was using and add another table for seating. The drink menu is confusing, they list the beers they have on tap and the the beer that they will eventually have on tap. Ya for a smaller limited, local menu but if your going to do that you need to execute it perfectly. Order 2 chicken legs, which is just that 2 child sized portions of deep fried chicken legs. Got to try there three dipping sauces 2 were good one was eeehhh. Then got fries that were not seasoned, and soggy. Poorly executed food will be the death of this place. Its pricey as well, I can see charging $ 6-$ 8 for a locally crafted beer. $ 6 for $.60 worth of chicken and $ 6 for a $.20 potato with beans on it, both of which were mediocre at best. This place has the makings of being great, They just aren’t there yet. Haven’t decided if I would return.

We visited Trubble Brewing a few weeks ago, excited that there’s a new place in the ’07. Immediately, we loved the atmosphere — modern but comfortable, enough space to not have to yell to talk to your table-mates, a sleek bar, family style tables in the middle, awesome brick walls with metal-tiled ceilings. Service was impeccable — right away our server said it was his first time serving, but we would have never known — he was attentive without it being overkill, made good recommendations, etc. I’m knocking a star off for the food — not because of the taste, necessarily, but because of the selection. I know they just opened, but a few more options — even just one or two — would be nice. We got the dip with pretzel bites as an appetizer and while the dip had a great flavor, the fact that it was served cold was unappealing — I think if they warmed it and made it gooey instead of like a hard spread it would be much better. The sandwiches were delicious. We didn’t order the salad, but the woman next to us did and she seemed to really enjoy it, and it looked phenomenal. We’ll definitely be back — and hopefully they’ll have a few more food options on the menu! Love what they’re doing with supporting local and cooking with what’s in season!

Visiting from out of town and ended up here for Sunday Brunch. Décor and feel was very modern and welcoming with local art on the walls. The space is fantastic. The brunch menu was limited to several items and while the Kimchi Quinoa was tasty, the portion size was very small and my request for a side of bacon was denied even though bacon appeared in other places on the menu and seemed like a simple request to accomodate in a less than full restaurant. Had to stop for a bagel an hour later to quench my hunger. Still, I would definitely come back again if I am in Fort Wayne and would look forward to trying their beer and dinner menu.

Trubble Brewing is becoming a hotspot in the Fort Wayne beer scene… and they haven’t even started serving their own beer yet! This place really topped the icing on the cake with rolling out a Sunday Beer-unch menu this past weekend. I was floored to see a downtown restaurant opening their doors up to a Sunday brunch. So many places shut down on Sunday and downtown dwellers have to venture out of their hoods. I started my beer-unch with a mimosa offering. It was orange juice mixed with a wine… I prefer champagne but it was nice to mix it up. I was with a few friends so we ordered up a bunch of different dishes: «The Dad Bod» — cheese fries, bacon, fried egg served with hot sauce. «Kim-cheese fries» — beer cheese with fresh kimchi. Biscuits and gravy. Black bean breakfast burrito– black beans, egg, cheddar, green onion, pickled jalopenos, cilantro, crema with house made hot sauce and salsa. I personally enjoyed«The Morning After» a sausage burrito topped with beer cheese and french fries. Holy goodness this was the best hangover cure in town. Samplings of everything was awesome. They have something awesome going with their french fries on the menu. Did I mention all their ingredients are local? Cha-ching. Nothing tastes better than knowing what you are eating wasn’t flown across the country. Menu isn’t huge and getting their ingredients local is why. Plus they are a brewery– any food options is great for me… I am mostly here for the brews! Right now I believe they have 6 guest taps that are rotating. Chad and his team have done an awesome job with getting some great beer in there while waiting to tap theirs. Service is great that I have had so far– super friendly, laid back vibe. Décor is awesome and very urban, comfy feel. Their are community tables in the middle which I think is awesome. Foosball and chess… talk about a place to hang with friends for hours! Cannot wait to come back and try their beer in the very near future!

Trubble is a newly opened brewery/eatery in the old Chapelle’s seafood location, and uses the space beautifully. First and foremost, I have to say that I –adore– the aesthetics of the place. Care was clearly taken in preserving the space’s historic beauty while providing an inviting atmosphere, and they do it well. I attended a CAYE event here(Community Ambassador Unilocal Event) and this was my first experience. I’ve been following Trubble’s progress online for awhile now, so this seemed like an excellent forum to try the place out. Service is excellent and the staff seem friendly. Sadly, they haven’t gotten their license yet to sell their own beer– but that’s hardly their fault. I know I’ll be back as soon as they do(I’ve heard the peanut butter porter is going to be amazing!) and as the menu gradually expands a bit. I learned that Trubble only uses local ingredients, which is awesome. I fully support the idea of a restaurant doing this if it’s able. I think my only quibble currently is that the menu could be slightly more expansive even given these limitations– but the food we DID have was very tasty, so I can’t complain too much. I have more respect for a locale which starts smaller than it might need to in order to refine their sense of quality, rather than rushing ahead and doing a bigger array of food poorly. Good thinking, Trubble. We ordered the«Trub Cheese», which is a big dollop of sharp cheddar/onion spread served with, as the menu proudly declares, «some kind of carbolicious cheese transportation.» cute. The vehicle for the cheese turned out to be mini pretzels. It was good, but over time I’d probably like to see something more origional– maybe something made in house? whatever the case, awesome snacking food. For being sharp cheddar, the spread was overshadowed by my beer– but I was drinking a Founder’s Backwood’s Bastard scotch ale, so maybe that’s going to happen no matter what. We also got a two-piece selection of their drumsticks with vinegar ‘hot sauce’, which was delicious and cooked perfectly. Overall, I approve! I think my opinion will be better once they refine the menu a bit AND have their own beers on hand. I’ll definitely be back! other pros? … a chessboard table and some other games for visitors to utilize. Trubble clearly means to engage their customers usefully and creatively.

Disclaimer: I am much more a wino than a beer know it all but I am excited to have another brewery in Fort wayne so I was happy to give it a try. With all of that being said I do know good food when I taste it and I really enjoyed the black bean topped French fries. If you don’t like spicy you might ask for without jalapeños but if you are adventurous I would suggest trying it all! The vibe was a place to go with a few close friends and try something new. They aren’t brewing their own yet but I will definitely visit again when they have their own beer.

I’m not usually one to review new places right away — I’d rather wait a month or two and let them iron some of the kinks out before I visit. But I made an exception for Trubble. The wife and I were in Fort Wayne over Thanksgiving weekend to see family and I couldn’t resist checking out the new hot spot just days after its official opening. Their location in the old Chappell’s building is great, and the place looks spectacular both inside and out. The expansive patio is currently home to stacks of tables and chairs just waiting for spring’s warmer weather. The only downside to its location is that you need to loop around the back via a few side streets to get to the parking lot. It’s not the end of the world, but a minor inconvenience. Inside you’ll find beautiful brick walls, a good number of tables, the small bar, a server’s area, a wall of local art, and even a foosball table. Another cool touch is what appears to be the old Chappell’s awning redone as a backrest for bench seating along one of the walls — a nice touch to be sure. The place is loud and energetic, but not overwhelming(it’s a bar, after all, not a library). It’s a little cozy, but not too small. However, I could see it filling up pretty quickly, so keep that in mind if you have a large group. We managed to find seats right away, which was impressive considering how busy the place was. Our server was quick to get us some water while we looked over the beer list and quick to bring out our savory brews once we ordered. Unfortunately they aren’t brewing their own yet(gotta love government paperwork), but they had a nice selection available on their six taps nonetheless. We looked over the food menu but didn’t end up getting anything(still too full of turkey, mashed potatoes, and pumpkin pie). I guess I’ll have to save that for a future update too. So, while we may not have been able to get the full experience, the experience we had here was a good one. The location is perfect and gives the brewery a great feel. Our server did a great job taking care of us and we left wanting to come back. Even incomplete, it seemed like a very successful opening weekend to me and we can’t wait to return to try their beer and food.
