I buy from Beth, the farmer’s wife, at the Cuyahoga Valley Farmer’s Market in Howe Meadow on Saturday mornings. Look for the queue, it’s worth the wait. Get to market late, however, and they might be sold out of pork chops, bacon, sausage or loin roast. At the Ohio Ecological Food & Farm Association(OEFFA) site, you’ll find Ed Snavely stopped using chemicals in 1986 and was certified by the OEFFA in 1989. Pork, feed mix and hay — all certified organic; sustainable. reports that Snavely’s pigs are«raised outside where they can socialize and root in normal pig fashion»; and birth in huts where the sows build nests to raise happy piglets. Snavely’s heritage breed pigs — Large Blacks and Tamworths — are listed as «critical» and«rare», respectively, according to the American Livestock Breeds Conservancy. It means his efforts preserve the earth’s biodiversity for future generations and protect our consumer choice. Not a bad food chain to link to.
