Ed Johnson, not like a salesman, but like a man with true passion for his work, persuaded me to try his different kinds of honey today spread on tiny homemade biscuits(he didn’t have to twist my arm too hard). He explained to me the different kinds of honey he had available and why they taste different. I didn’t realize until I tasted it that I’ve been buying his honey for years, but I had never met him. He supplies many organic grocers in the area, as well as a few markets(like Jack’s) and some stalls at the Nashville Farmers’ Market, but I didn’t realize he also participated in the Franklin Farmers’ Market. Today, he had brought along his bees to show people how bees go about making honey, and it was obvious how much he loves them and cares for them. He had marked out the queen, he said, with a red dot, and I tried for ages to get a glimpse of her in the closed hive, but without any success. He said she was being uncharacteristically shy! His love for the bees comes across when you taste his honey — it’s heavenly, and I love the jars that come with the honeycomb still inside. My favorite was the wildflower honey, darker, he explained because of the different pollen, and richer in taste, almost like Golden Syrup or molasses. It sounds cheesy, but you really can taste the love he pours into these jars. As well as producing honey, he also provides queen bees to people who want to start their own hives and sells bee keeping supplies too. He offered a wealth of advice to my friend who said he was interested in keeping them, and said he could call and chat about it anytime.
