Easily one of the best places to eat I have ever frequented. My wife and I make a point of going to this place for our anniversary, Valentine’s Day, and any other event that deserves celebrating. Wendy’s food is simply the most unique, intriguing, intoxicating creations I’ve ever had the opportunity to eat. There is talk of her opening a permanent establishment in Bethlehem, and I await this with a giant appetite.

If you have only gone to Wendy’s incredible themed world cuisine buffets, you also need to plan for one of her plated dinners. This way you will make sure to get the proper presentation, because I sometimes miss how things should be combined when I am dishing things myself. Her food design is fantastic, and she explains everything on the plate so you know what it is and can ask her questions. I don’t think there is any kind of healthy compassionate food Wendy shies away from, a certain culinary fearlessness I wish I could develop. Her Polish/Slavic feast(4 kinds of pierogies!) satisfied my friends who are experts in this type of food, having grown up with it. Maybe she could do African? South American? She probably has, and I just missed it. I’d love to get her take on raw too, though she already incorporates this into her repertoire. Wendy combines hearty savory food with a creativity that always teaches you something new.

A few days ago, we had Thanksgiving dinner — really, FEAST — at Wendy’s Balasia — A Green World Café, in Hereford, PA. We began with kombucha — an interesting effervescent, tea-based beverage. After that, there was a yummy butternut squash soup. Then, in quick succession(we had trouble keeping up!), came roasted veggies with garlic soy nut butter and herbs, whole grain bread stuffing with rosemary and garlic, parsley and garlic mashed potatoes, homemade cranberry sauce with orange zest, roasted sweet potatoes with caramelized walnuts, homemade seitan with baby bella gravy, coriander-mustard baked tofu, and a seasonal vegetable-stuffed pumpkin. We finished up with pumpkin pie and cheesecake. Everything was vegan, organic, and locally-produced. We took home so much food that we’re still eating it, two days later! Wendy is a very talented chef. Everything was delicious! Thanks, Wendy!

Wendy has been making excellent food for several years now. I have eaten her food and been dazzled by it over and over every time I am anywhere near the area. Her ability to fuse local ingredients with exotic flavors is unparalleled. The only thing keeping this business from getting 5 stars in my opinion is the location: it is pretty out of the way, and I had a rather hard time finding it the first time I went there.
