The Nimitz Fish Market opened a few months ago because boat captains were trying to sell fish directly from the boat to the consumer for $ 2 a pound. The harbor police told them that they could not sell off the pier so WHAM Nimitz Fish Market! The new fish market selling fish at $ 2.50 a pound plus tax makes it about a 30 percent increase but it’s still a great deal. The only problem is you must buy the whole fish — head, skin, tail — everything. Fortunately I have a friend who is a skilled fish cutter but without her help I definitely cannot do it on my own. Nimitz Fish Market also provides fish cutting services for a nominal fee. As long as you are buying a whole fish about 10 pounds to a hundred pounds you’re fine. You can then take the fillets and make it in to poke or sashimi or fried out here or whatever you want. I recommend calling ahead to see if they have the size and type of fish that you want. Well sometimes you just have to deal. No fresh ebi on Saturday but all the flash frozen we wanted. And we still wanted 5 lbs. Not for grinding raw,(we’ll wait for fresh) but we were planning to eat them grilled anyway. Soaked in cold water for 15 minutes and drained. Ready. Sea salt, canola oil, nuff. Grilled crisp, ate the steamy heads first and the firm, chewy tails which bro wanted to overcook this time just to experience the difference. In a word, delicious. Cooked or raw, the frozen version of this shrimp didn’t disappoint at all. The heads cooked have a firmer but still luscious texture and a meaty, shrimp to the max, taste. The scorched shells flavored the shrimp something ono. Next time we have to go to Marukai for tarako musubi. It would be he only way to improve on this delectable lunch. My niece dusted a couple of pounds for her family with cornstarch and just fried. This shrimp just LOVES a bath in bubbling oil. Excellent. Heads and tails gone. Pau hana. My family. Savages.
