To start with, I am a fat guy and BBQ connoisseur, I had heard that this was the best new BBQ shack in Huntsville from a friend who’s opinion I respect particularly when talking about Q. So I stopped in and tried it, nice place with a walk up and order window. I was hungry because I had skipped lunch so ordered the two meat plate with the Alabama staple of pulled pork and not an Alabama staple beef brisket, I got this because I like it even though it’s kinda sacrilegious to serve it in Alabama and it’s very hard to get perfected so I thought this will be a good test. First of all this place is pricey, $ 13.63 after tax with no drink for two meats, two sides and a piece of toast(untoasted white bread). I will assume that one of the reasons I was a bit let down is because it was so late in the day(3:30PM) I’m sure the meat that had been in the warming tray in a large Ziploc bag had been there from well before lunch time just soaking in all of its fat juices. the pork was tender but was a bit greasy and didn’t have enough of a smoked flavor, needed more rub, smoke or something and less grease. Now onto the one think that’s hard to get right, the brisket, this was cooked OK but tasted very greasy which may also have been partly due to the fat cap that was still on there, it too needed more flavor, it was tender but so are most beef roasts cooked in a crock pot which is what this tasted like. Now to the sides, macaroni and cheese was seemingly baked and was OK but a bit too greasy as well. Finally the one saving grace was the potato salad, this was awesome stuff and reminded me of my once favorite BBQ joint in the Huntsville metro area and that was Thomas Pit BBQ which closed recently, I thought I’d never taste any like it but this is as close as you’ll get. I’ll be back just for the potato salad but the BBQ was just OK and needed more, flavor, smoke and less grease.

Super cute BBQ shack. Great marketing in the Redstone Rocket; I wouldn’t have known about it otherwise. Very friendly service. Pork BBQ sandwich was large and on a soft, fresh bun. They offer cole slaw and pickles on it, if you like. The sauce that comes on the side is wonderful… Clearly homemade, very flavorful, and vinegar based. I also got a pint of the smoked Mac and cheese. It was very good, but greasy, had hard pieces that should’ve been discarded rather than served, and needed salt. Next time I’ll ask for some. Would’ve gotten 5 stars if: the rubber mat that I stood on to order wasn’t soaking wet and dirty. Throw it out! There’s no need for it, especially if it just pools water. Also, add a wet nap and a candy. That would be perfection.
