I have just this evening finished an amazing six course meal by Chef Wesley Brage. I can’t be more pleased. We came up with a challenging six course menu for our wedding reception, and all 12 guest cleaned their plates after every course. The food and service were amazing and professional. Even the white chocolate mousse with a raspberry reduction, a very finicky dish, came out beautifully under his capable direction. I would without doubt use chef Wes again for another occasion and highly recommend him! Thank you so much for such a perfect night!

EXTREMELY pleasant, talented and accommodating! We came to Florida keys with a family of 10 adults and 3 kids. We also bought a little too much meat. Even tho we discussed and confirmed the menu prior to arrival, EVERYONE had an opinion about how to change it once we got to the place. Chef Wes kindly accommodated ALL of our requests. The food was delicious. Cut to perfection. Grilled, baked or roasted to PERFECTION. I can not thank you enough. Marina

When my wife and I planned a wedding in Islamorada we took a lot of chances. One chance that we took was that we needed someone to prepare multiple meals for our families over two days and made our decision based on some spectacular pics of food. We didn’t try it before hand. We had no idea what to expect and really needed Chef Wes and his staff to help pull off a great wedding weekend. Upon meeting Chef Wes and his team on the night of his rehearsal dinner, I found them to be warm and professional. Immediately they seemed very organized and flexible to our specific needs. The service was outstanding. We can not say enough about how great they made us feel. No one was left waiting or wondering where staff was. They stayed on top of every detail. We were able to enjoy ourselves and relax knowing we were in great hands. After each meal, they left everything as they found it and nobody would have suspected a large meal was cooked there. When the food arrived it was stunning. The presentation left people speechless. Every plate was vibrant and mouth watering. We had seen the pictures and expected this. My soon to be wife and I looked at each other and hoped it would taste nearly as good as it looked. Then came the first bite. It was delicious. Internally, we were both jumping up and down from joy. Not just because everything was perfectly cooked and seasoned but also from the relief that this gamble had paid off in a big way. I still dream of his Steak Madagascar. It was a perfectly cooked savory piece of meat. The hogfish was so tasty and there was an array of sauces on the table that went with everything just as he described. A few months back I had talked with Penny, the lovely woman who will help you organize a truly exceptional event, and had mention that my fiancé was a sauce fanatic and thus needed food options that came with something to pour over it. Penny assured me this would not be a problem. I did expect extra sauce. What we got were large quantities of several different sauces that each went well with every protein and vegetable. It was truly extraordinary. With little notice I asked Chef to prepare some fresh fish we had just caught and did not know what to do with. My best man has brought up how well prepared it was almost every time I have seen him since. Chef Wes and his team greatly added to our wedding experience. We can’t thank them enough. We needed a great job; they gave us so much more. My wife and I smile when we think about the gorgeous presentation of the Chicken and Shrimp Caribbean in a pineapple and how we thought is was a family style plate till they began placing one in front of everyone or when the final course, a perfectly balanced(not too sweet or tangy) slice of key lime pie with a heaping mound of light and fluffy brule’ed meringue, made everyone’s jaw drop. We both were filled with immense pride by the enjoyment our families had during every meal. If you are planning an event in the Keys, I hope that we have convinced you that Chef Wes and his team are the best choice you can make.

Chef Wesley & Assistant Penny & team AMAZING people! I honestly cannot thank these people enough for pulling off our wedding reception with a last minute venue change! Penny you were my Rock! & Chef Wes I did get married. LOL! Ok now about the food… When your guest come to you the next day and say BESTWEDDINGFOODEVER! Enough said! We had an island style… oysters on the half shell, shrimp, crab legs, amazing seafood fresh, and no sand in those oysters cleanest we have ever had! Thank you for making our wedding so much FUN! I cannot recommend Chef Wes highly enough. If you are planning any event in the Keys that you need catering for, go here first! You will not regret it. We were recommended Chef Wes’s services while planning our wedding in the Keys(while living overseas with a 13-hour time difference!), and it was the best thing to happen for us! We had experienced tons of issues with other places, including a lack of communication, knowledge, and professionalism, but Chef Wes and his staff(a major thank you and shoutout to Penny!) were 100% flawless. We got our first invoice within hours of first contact, after which we walked through the menu item by item, discussing each one and how many was appropriate for our guest numbers. Any changes we requested or questions we had were addressed and the invoice would be updated immediately for our records. It was a huge relief to work with them through the preparation and planning period; we would have gone crazy without them! On the day of, the entire staff was friendly, attentive, and professional. They walked around and refilled glasses or cleared plates as needed, all the while chatting with our guests and smiling. It created a wonderful atmosphere and allowed us to relax a little bit as we knew our guests food needs were being taken care of. Thank you to Chef Wes and all his staff for making our wedding that much more special and a heck of a lot less stressful! We sincerely appreciate it, and will definitely contact them again if we plan another event in the Keys.
