Tom and Brandy have created a brilliant food truck experience here. Their food is absolutely astounding. I ordered the Panang curry and it was phenomenal. I will definitely be back.

Former Mama’s Fish House Chef Tom Sibura has brought a great addition to Maui’s growing food truck scene. Best Thai food on the island, with favorites being the Cashew Chicken and Panang Shrimp Curry. Special Deep Fried Ribs and Garlic Shrimp are right up there, too.

Had this for lunch and it was amazing. We had pad Thai, cashew chicken, mahi mahi curry, green papaya salad, and the fried pork ribs. They were all amazing. If you really like spice, they have an additional dressing for the green papaya.

Crispy garlic shrimp was great. Fresh veggies, basil and lots of garlic made the dish so tasty. All served over a generous portion of rice. The only downside… only 8 shrimp for $ 13. For that price, I could go to another shrimp truck and get a bigger plate. The service was great and my plate came out within 10 min of ordering. The flavors were so good that now I’m curious and wanting to try other dishes.

I really am not a huge fan of Thai food, but after reading plenty of Unilocalers’ high recommendations, we decided to try Thai Mee Up for dinner last night. We got there at around 5:30PM, and the owner was happy to help us right away to talk about the menu and what was popular. Based on what I read, we decided to go with the pad thai and the fried pork ribs, and we were not disappointed! My husband is a die-hard pad thai fanatic, and he loved the chicken pad thai. The bites I could grab were very tasty– saucy(but not wet), spicy, and sweet. It was also a huge portion, which was great, and made the price quite reasonable. The pork ribs came with a plentiful portion, and were absolutely delicious. Tender yet meaty, with a sweet and savory coating. The green papaya salad on the side was the spiciest version of it that I’ve ever had, which was a nice change. It also came with a scoop of fragrant jasmine rice. Everything was great, and I can’t wait to go back to get more! We’ll probably take it to-go next time, so we can chow down in our pajamas at home, but I’m already planning my next order!

Awesome Thai flavor! their chicken green curry over rice, next time order the rice on side, because green curry is a little spicy(which I love by the way), and they come piping hot, made to order. Pad Thai was tasty, but way too sweet for my palate. Other than that, noodles were cooked perfectly. Shrimp fried rice was on point. Fellow bloggers are raving about fried pork ribs, I thought was good. It was tender yet over seasoned. But overall, hubby & I are happy we have tried this place and we do mean for you to try. This place has an amazing flavor of Thailand. Their flavor takes you there even from Maui. we have not set our foot to Thailand yet but it gives you an imagination of what their flavor of Thai taste & smell like.

Kama’aina & top of the line service by the local owners of this super cute thai food truck! I love the spice of the curry, & sweet caffeine flavor of the thai iced tea. I recommend this place to everyone! Great price to go along with all the flavor in every dish! Make sure you say, Spicy, if you like it Spicy!!!

Tom and Brandy… job well done! Bless your heart for sharing your amazing food and thank your mom for passing this talent to you. And thank you Unilocal for putting hidden gem places like this on the map. I love ribs so naturally I went for the fried pork ribs. So. Flavorful… garlic, onions, lemongrass, basil, green onion. It was also cooked to perfection, not dry or chewy, just tender. And let’s talk about portion… I should have counted but I scarfed it down too fast, but there must have been at least 6 or 7 big pieces of pork for $ 11! I can’t wait to try everything else on the menu! This is one of those places that I almost want to selfishly keep to myself so I won’t have to stand in a line when more people discover it. Instead I will shout to the world or at least to the Unilocalers that this place rocks and you must try their food!

The flight was delayed and we were hungry so we looked up restaurants near the airport. We saw the reviews so we checked it out and they did not disappoint! We got the Pad Thai with shrimp. Soooo delicious for $ 13 a plate. My husband said he’s spent $ 50 at some restaurants that don’t even compare. They go out of their way to make sure you enjoy your food. Our food was DELICIOUS, but he called us back when we were done our food to tell us he thought he didn’t make it exactly right. He then handed us some amazing pork ribs(so flavorful) to make up for it. If you are ever near the airport in Maui go to this food truck across the street from the Costco gas station. Yumm!

Five stars. I rarely give these, the place needs to be pretty spectacular to get a perfect five stars from me. Let me tell you, this place is on point, perfect. So, after getting off work late, we did a costco and gas run, was all set to go home, cook a quick dinner and call it good. Bypassed the costco food court because we were sticking to our plan. Pull out of the gas station, see the light on in the Thai Mee Up food truck. Game over, change in plans, we’re going there. Pull into the parking lot, which was nicely lighted, gravel lot. Walk over to the über cute food truck, looks a little like a wagon/trailer, rounded in the front, glass windows *which were impressively clean btw* all around, showcasing the amazingly clean kitchen inside *always a good thing for a customer to see*. So i was torn over the menu… Debating between the pad thai and the crispy garlic shrimp over rice. I asked if i could get the shrimp pad thai with the crispy garlic shrimp, the owner/chef responded with«ill try!!», with that attitude, lets go for it! Watched as my food was prepared, missed a little of the ending, but he called me to the window and said it was a first for both of us, him preparing it and me trying it, he said he tried a new way to prepare the shrimp to keep the flavor in and also to keep it crispy. OOOHHHMMYYGOD. First bite and i was in thai heaven!!! The shrimp was so delicious, flavored to PERFECTION, the shell attached, yet separated from the meat and SOOOO crispy!!! The pad thai was exactly how I like it, a little sweet, a little peanutty, a little spicy *i also added sriracha, which the chef said i need to order it spicy next time… But I’ve had thai spicy and thats a whooooooole ‘nother level of spicy!!*, and a whole lotta delicious! It was so delicious, i stopped eating, called the owner and told him how delicious it was *that was a first for me haha*, he was so surprised I called, at first he wad worried something was wrong with it, i told him«yes, something is wrong, its so damn delicious i cant stop eating it!!» HIGHLY recommend this place, food is damn good, prices are reasonable($ 13 for shrimp pad thai). There’s also lots of outdoor, covered seating, but we opted to take it home. Can’t wait to go back and try something else *but then again, this dish was so good, i may go back again and again just for the pad thai!*

Authentic Thai made with fresh ingredients while you wait. So delicious. Friendly and fast service. My husband had the pork ribs, I had the pad thai. Both were really tasty and a fair price for the generous portions. Bonus points for the biodegradable to-go containers lined with a fresh banana leaf! I can’t wait to go back to try everything!

The real deal when it comes to flavor. Ive been eating here for the last 3 weeks when I can make it. Pork ribs are unreal and hands down my favorite, while Garlic Shrimp, Fried Rice and Pork ribs is my girlfriends favorite. For a person who’s picky about Thai Food, and Food in General my Girlfriends chooses Thai Mee Up as her food stop each time we are in the area, which is almost everyday. Chicken Pad Thai and Panang Curry we’ve tried as well, each entrée has it’s own unique flavor in it, which is the reason we return time and time. If you are in the area or just arrived to the island, this food truck court location is a perfect stop to make! Always consistent, and always so DELICIOUS!!!

Ridiculously good. Can’t wait to go back. All food is cooked to order so super fresh. The veggies aren’t over cooked either so you can actually still taste them and they still have a nice bite to it. Nothing worse in my book than mushy veggies. I had their Panang chicken curry bowl on a bed of rice(I think less than $ 10IRRC) and my wife had the chicken pad thai. Both were excellent and what we opine as being of a perfect portion. They cook everything mild so if you want some Thai heat be sure to let them know. Easy parking in a private lot. They take cards but no AMEX. Find them across the street from Costco Gas.

If you’re in Kahului looking for a great lunch, check this truck out. I’m always passing through the area for my Costco runs and saw this truck pop up a few weeks ago. Love LOVE Thai food so decided to check it out. Got some food for my husband and I… pad Thai noodles. Not dry, very flavorful! Comes with chicken OR shrimp I believe. Their fried pork ribs are so friggin savory and good. so is the papaya salad. We also decided to try the special with the stuffed chicken wings and fried rice. How they are even able to stuff a chicken wing??? I don’t know but it’s magic… try it if you see it on special! I’ve had a lot of Thai food and would say it is pretty darn authentic. Prices are reasonable for the portion and quality of the food. It’s a very refreshing change from your normal food trucks eg steak plates, shrimp trucks, BBQ. I’m guessing like anyone else on Maui, that you’re always in the Costco area doing a Costco rub so check it out! Def recommend!
