This place is great. The co-owner used to wait tables at the Country Inn, which used to have a burger worth a trip and still has a great beer selection. But Rough Cut is even better than that, because the burgers(and everything else) are excellent and the beer is brewed right there by the bartender. He tells me he brews in 31 gallon batches, which is why it’s FRESH and he knows his brewing so well that even if the food weren’t great, it would be worth going. He’s especially good at Belgian and English styles.

If you’re anywhere near this place, make it a priority to go, it’s incredible! Here are some of the reasons why I go back every time I’m in town: — All of the beer is brewed on site and is incredible… If you’re lucky enough, Kayne, the brewer, will be behind the bar — he’s one talented dude(not only does he brew but he built the bar by hand) — The bar is incredible, most of it crafted by hand from reclaimed barn wood, rail ties, concrete etc. — Bart the chef, whips up gourmet concoctions like its nobody’s business and turns bar food into something to write home about — the oscar burger is my absolute favorite. but then there’s the burrito. and the stew… and oh yeah, the wings… — Jesse’s always on point with the service. — I almost forgot to mention, there’s a burger + 2 beers for $ 20 night… what more do you need!?? Pay the boys at Rough Cut a visit, you’ll be happy you did.

I’ve been to rough cut and the beer is delicous with alot of character. Each has its own flavor and boldness. Food is good and prices won’t scare a large family away. This is the kind of character i look for in this region when i visit.

Excellent experience all around! Sat at the bar and had various beers(Minnewaska Trail Pale Ale, Deserted Island IPA and Fieldstone ESB) and each was unique and excellent. Also had the Hanger Steak with hand cut fries; excellent again. Bar staff was friendly and attentive. Interior was well thought out, with a consistent«Rough Cut» theme that was well executed. Impressed. A local who will be back often.

The beer is was very good, I had the 44⁄55 Double IPA, got the last of that batch. We sampled there home brewed selection, all were good. Roseability, Holstein Stout, Pomme d’ Orange. We then ordered from the menu. We got mussels with garlic bread and a arugula salad with fresh figs. We both ate the Oscar burger. The food was excellent. We sat at the bar which was a great spot. Well worth it. The owner Cain was a real pleasure and great service. 2⁄14 Josh was our server was very pleasing and he dealt with all our requests. we came for a nice Valentines Dinner with the family. As always the food was great wife had NY strip and I the Ribeye both were great. Kids split the salad and tuna and some of the strip. I had the Deserted IPA and wife had Fieldstone ESB. Great cozy ambiance near the fireplace. Happy Valentines Day.

We are self-confessed NYC food snobs and we bloody loved this place. Excellent beers(inc. an excellent English-style ale), fries to die for(they batter and deep fry them for ultimate, unhealthy joy), and all-round hearty food. Our group were all veggie and everyone was thoroughly satisfied. Ask to try the home-made spicy sauces if you also enjoy the sensation of having your mouth on fire.

The atmosphere is great and the beer is even better. I have been to this place a few times and have never been disappointed. It is an excellent location for a casual meal/drink or to go after a day of hiking whether it be at Minnawaska or The Catskills. The drive from the Catskills to this place is WELL worth it. The beer is varied and sharp. I would recommend getting a flight of the current beers on tap and then making a decision on which one to get a full pint of. The calamari is excellent. So is the Oscar Burger and the Steak Burrito. The staff is welcoming and friendly. I look forward to many new experiences at this place as the beer selection develops. A new plus is the addition of a wood stove. I can’t wait to sip some of this great beer while enjoying the wood stove.

Great burger. Low vibe atmosphere and friendly service. I recommend the crispy tofu roll appetizer. And the brew is excellent. Will return soon. Update: We have returned many times and each time are rewarded with great food and some of the best brew in all NY state. Try some of the homemade habanero sauce. And if you love meat the rib eye is very, very good.

Great beer selection! We stopped here for dinner on a Saturday night, waited about 20 minutes for two seats at the bar. They have books and board games to keep you entertained while you wait. The waiter was super busy since the place was packed, but he was so attentive and friendly! We both got a couple beers, burgers and fries, and key lime pie for dessert, everything was delicious!

A GREAT brewpub and a much needed addition to the Ulster County beer scene. It’s been very many years since I’ve visited a brewpub where so many of the beers were outstanding for their respective styles. So far over two visits I have tried the DESERTEDISLANDIPA, the 44⁄55DOUBLEIPA, the MORTISE&TENONBELGIANDOUBLE, the OILBURNERBLACKIPA, and the BUMPKIN, and they were all fantastic. I believe that Kayne(part owner of Rough Cut and brewer) really makes the best beer in the Hudson Valley. I’ve been to a number of other local breweries and have found that while some were better than others, none were exceptional. It seems to me that generic taste bordering on bland is the norm. Rough Cut is a game changer. If you are like me and have gone years since the last time you visited an outstanding brewpub, make sure that you pay these guys a visit. I haven’t really given the food a fair shake yet, but I did get a burger which was served on an in-house made roll and I really enjoyed it. The roll made a nice difference. I had been complaining lately to my wife how hard it is to find a good burger for some reason, but Rough Cut scratches that itch. I always enjoyed the food at Oscar’s(The chef’s previous restaurant at this same location) and I look forward to trying much more of the menu. There seems to be a good amount of pub and comfort food offered which is especially satisfying now that my other local staple — The Country Inn — has given up on serving that type of food in lieu of an Italian menu. I love Italian food, but sometimes you just want pub food.

Excellent DIPA(44⁄55 Double IPA). Very smooth for a high ABV beer(be careful, it will sneak up on you). Had the wings, and based on the quality, I’ll be back soon to try the muscles and some of the entrées. My only complaint: No growers, and Rough Cut doesn’t bottle/can, so I guess I’ll have to return more often :)

Visited the Rough Cut on s Saturday night and arrived to a tasteful 80s mix and welcoming atmosphere. The Roseability brew was fantastic. The food is good; nothing to write home about, but we were not disappointed by fish tacos, a standard burger, and a delectable tofu appetizer. It’s a memorable spot for a weekend night.

I stopped here with my husband while staying in the area. We really enjoy going to breweries and trying local beers, especially when it means supporting a local buisness. The vibe when we entered was quiet but nice and as the night went on it got busy and more lively. One of the owners was our server and was very polite. My husband was promptly served his beer and my water was refilled whenever it got low. The beer, specifically the milk stout, was very good. Perfectly balanced and sweet. Our appitizer, the calamari was also served fairly quickly and was tasty. However, that is about where our good experience ended. We both ordered steaks and after a half hour plus we watched people that were seated after us receiving their meals. I believe our server who was an owner noticed our impatience and explained that my husbands steak was over cooked and they were re-firing it. By the time we got our food it was obvious either the ticket was never put in or my steak just sat while his was redone. The kale was yummy and so were the potatoes but the steaks really left something to be desired. The fat was not rendered off my husbands strip steak, and my ribeye was overcooked and bland despite the sauce. We also had to ask for steak knives because they forgot to give them to us, we were left with just butterknives. I ended up having more than half of my food put in a container to go because the letdown after I got it had left me fairly agitated and not hungry. I really wish I had better things to say about this place, I wanted to love it as much as I loved the beer but it was really a let down overall.

My wife and I checked out Rough Cut last night. It has potential, but for now it’s a little rough around the edges. We had the house made jalapeño poppers which were good but a little bland. They do get credit for house made, not food service freezer grade. We had two different beers, both brewed in house, they were good, but didn’t wow us. I had the Oskar burger which was excellent, a quality hand formed thick juicy burger cooked to the correct temperature. My wife had the fish tacos which were fine, but didn’t pop. Interior décor was ok, one large painted wall could use a little artwork. The exterior could use a few hours of clean up gardening and it would look a lot better. I understand it’s a new venture and I hope with a little time it will move up a star or two.

Overall very good experience. Husband’s steak and fries were super tasty. I ordered the nachos which could have used more toppings(the proportion of chips to cheese/beans resulted in quite a few dry chips) but we’re pretty good overall. The bartender was really helpful letting us try a few beers before we settled on one. However, the night we were there a few of the brews were either out or having problems so there were only 2 beers and 1 cider to choose from. More variety + working taps would be necessary improvements. Also, the sign is hard to see from the road — needs lights or to be bigger. We will definitely be back next time in the area.

Outstanding beer and food at a cozy, rustic newcomer. I’ve been a beer enthusiast for years and have brewed some of my own and I was very impressed with the two beers I tried, an IPA and a double IPA. My wife, who doesn’t even care much for beer, loved it and said it was among the best she’s tasted. My favorite was the 44⁄55 double IPA. Can’t wait to return to try others. The food was equally laudable with many vegetarian and vegan options alongside meat and seafood. We tried the house-baked pretzel(delicious, piping hot with whole-grain mustard), jalapeño poppers(just the right amount of spice), and tofu sticks(coated with hemp seeds for a beguiling texture and topped with a rich herb sauce). Then we split the veggie burger which was excellent. It came with crispy fries and in a very fresh ciabatta bun with fresh avocados. The burger itself was wonderfully spiced; it tasted great on its own. But paired with everything, the burger was even better. When you walk in you’re greeted by a large, stone fireplace that will be great for winter warming. The interior is tastefully decorated with reclaimed wood from the brewer’s barn and antique lighting that gives the place a homey feel that isn’t forced and reflects the surroundings. Go around the back of the fireplace to find the bar where we sat and enjoyed excellent, attentive, but not at all invasive service. Just a short drive outside of New Paltz and down the road from Lake Minnewaska and Mohonk Preserve, Rough Cut is a destination that’s well worth the trip. Head and shoulders above the offerings in town with personal service that can’t be beat.

Overall very disappointing!!! You would think it being called a brewery they would have more than two beers on tap(1 being there’s a stout) both served kinda warm. They cook table by table our app took over a hour. Server doesn’t come by to ask if u need anything. The huevos. Ranchero corn tortilla had something on in so spicy that it was inedible(and I like spicy food). Wife’s hanger steak was cooked perfect but kinda of bland. Cousin ordered vegan chili which was just some seasoned beans. Being a chef I was amped up to have a brewery in my neck of the woods but definitely fell short of expectations. I understand it has only been open for a couple of weeks but they should have had there stuff together specially being a holiday weekend. Next time I would probably just go to mountain braus house.

The beer was very very good. My husband and I weren’t that hungry so we ordered a pretzel and nachos. The pretzel was like rubber. Obviously microwaved and maybe a few days old. Not at all worth the money. The nachos also tasted microwaved and stale. I hope they get it right with the food because the beer is outstanding. The interior is also lovely with a good ambiance. The menu is small enough that everything on it should be great. Good luck!

Just served a pretzel that was basically a burnt chew toy. The server was one of the owners, he was very slow and never smiled. The interior was rustic and nice. The beer was average. A flight of three beers cost $ 9.

Gilded Otter, watch out! This delicious, cozy brewery makes one rethink driving to New Paltz. In the mood for seafood? Try the savory calamari. Feeling some veggies? The arugula & fig salad is to die for. I am going back tonight to try a different brew because the IPA I had last night was so delicious I kept ordering more. Brooklyn has instilled in me an expectation that every place needs to achieve a perfect balance of food, drink, and vibe. Rough Cut’s done it and it’s only the beginning… The only thing rough about this place is heading out for the night. Otherwise, it’s as smooth as can be!
