Call me Mrs. Potato Head, because when it comes to potato wedges, I’m a hoarder, not a sharer! 3 Potato 4 serves one item(fries) in two sizes(small or medium) with a variety of awesome dipping sauces. I came across their booth at the Downtown 3rd Farmers Market on Friday. Having never heard of this delightful little business, I didn’t even consider checking in on Unilocal. My mistake, as I later discovered a check-in offer for $ 1 off a medium order! Oh well, next Friday. 3 Potato 4 uses no oil to cook their potatoes. No oil. That’s right, these wedges are fat free! They use a fancy superheating oven to bake the potatoes until they are crispy, then toss them in a light seasoning blend. I sensed a hint of lavender, possibly some herbs de Provence. They advertise that their fries aren’t French, so I may be wrong. The two guys working the Farmers Market were super cool. They encouraged me to try the homemade sauces so I could decide which one I wanted with my order. I sampled the cherry pomegranate BBQ habanero and curry ketchup, which are their two vegan selections. The peanut satay sauce was complex with many spices. Other selections included chipotle mayo, a Sriracha-themed sauce, roasted garlic-black pepper… it was not an easy decision, but I eventually went with the curry ketchup because I’m German. Next Friday, I’ll ask for whatever their version of ranch is, because potato wedges love ranch dressing. The small paper cone of potatoes for $ 4 was a fine serving, though I’m sure I could have finished a medium order for $ 6(or $ 5 with your Unilocal check-in!) While they are working on a permanent location, you can find 3 Potato 4 at First Friday and the Downtown 3rd Farmers Market. Just remember: Friday is Not-Fried day.
