I stopped into Primo this afternoon on a quest for truffle oil, and I was pleasantly surprised. The owner was friendly and very genuine, as well incredibly knowledgeable and helpful. Based upon my request for truffle oil, he recommended another oil that was right up my alley. I look forward to experimenting with both! Will definitely be back soon, and plan on spreading the word with my friends and family!

Great store, very kind and helpful staff, many amazing products. You can try everything, which I suggest. They rotate some stock based on seasonal taste. So nice to have such a specialty store in louisville. We ended up buying a couple gift sets as well as gift certificates and had our own little tasting parties.

Below is copy of the reply sent to me from Bob at Primo Oils & Vinegars. —- start —- I did not realize you had asked for info until I was alerted to your Unilocal post(I assume it was yours), It is Primo’s policy to provide all chemistry and crush dates so I retraced steps and found your message in the spam folder. All Primo oils and vinegars are gluten free and produced in gluten free facilitiesl Olive oil crush dates and chemistry(polyphenols, oleic acid, FFA and peroxide values) are specific to each varietal. Nutritional facts for olive oils per 1 Tbsp(15 ml) serving are: 120 calories, Fat Cal 120, Total Fat 14g or 22% daily value. Saturated Fat 2g or 10% daily value. Polyunsaturated Fat 1g. Monounsaturated Fat 10g. Transfat 0g. Sodium 0 mg. Total carb g. Total carbs 0%. Protein 0g. Not a significant source of cholestrol, dietary fiber, sugars, Vitamin A, Vitamin C, calcium and iron. Based on 2000 calorie count. Balsamic vinegars are made from 100% Lambrusco and Trebbiano grape must(juice). No artificial flavorings are used in the process. Recently while visiting family in the area, I happened by this little shop. I wasn’t really sure what to expect out of it, but I was pleasantly surprised. Typically I wouldn’t know what to do with a great diversity of oils or vinegars other than make a ton of dressings, but fortunately the knowledgeable and friendly people running the store helped me through this. What surprised me the most was how similar this is treated to say, a winery where you come in and can sample some of the flavors before you purchase to get an idea of what you like. In this case I like several oils and vinegars each, but I didn’t want to have too much on hand so I settled for a light peach balsamic vinegar(I passed up a very nice pepper oil and a savory mushroom oil also). So far I have enjoyed the balsamic peach I picked out, using it with several kinds of dressings as well as pairing it with a pan seared salmon steak. The only hinderance I had here was the price, but it’s to be expected due to the specialty nature of the products, as well as the quality. When put in perspective though, it’s not much more that would be seen at a standard grocery that would have a lower quality and less selection. All in all I look forward to going back next time I’m in town.
