Great service and attention. Sushi — delicious and server took time to explain anything we were not sure about. The place cozy and clean and well decorated. Staff was attentive. The use plastic chop sticks if you care for the environment too. I was actually impressed by the server sorry forgot her name.

I’ll never eat at this place for what I saw. This place is in food court in H-Mart, and the part of the kitchen can be seen from the food court. One time while I was having late lunch in the food court, I saw their chef bringing raw salmon bought from H-Mart to prepare for sashimi. Maybe other Japanese restaurants also buy their raw fish from supermarkets, but I was under the assumption the fish they use are freshly bought from local fish market early that morning, or at least brought to the store the best way to keep freshness. While I understand that this Wasabi Express isn’t exactly top notch Japanese restaurant, when I saw they just use the raw fish H-Mart had(who knows how long it’s been in the store), I was still turned off. But another incident made me just disgusted. During this incident, the sushi chef was preparing sushi rolls with his bare hands(as most of sushi chefs do). While doing so, a new customer came up to the counter to place an order. The same chef stopped making sushi, took order on a slip of paper, tended the cash register, tended the credit card machine, blew his nose, and then went back to making sushi rolls with his bare hands all without washing his hands~! No gloves, no quick swipe on a towel, absolutely nothing~!! Also, I saw him later tend the cash register for a different customer. As soon as he was done, without washing his hands, he pinched wasabi from a container and place it on a little dish to serve it to another customer. Obviously, this place doesn’t know the definition of freshness nor sanitary. Even if you didn’t get a formal training, if you consider yourself a sushi chef, you know freshness and cleanliness are two absolute must. I’ve been to many Japanese joints in food courts, and still the chefs hold themselves to high standard. This place brings shame to all Japanese restaurants around the world.

I’d skip most of the stuff on the conveyer belt. It’s not that the conveyer belt items are bad, they’re just too pricey. The ramen noodles, however, are arguably the best you’ll find in Seattle metro area, better than what’s available at Samarai Noodles in I district. And you can get a discounted side-dish, like a tuna sashimi rice bowl, with it. For some reason, not many people order their noodles. Most people order the bento box, which is very good, but boring.

I’m not a big sushi fan, but I really like Wasabi Express. For the price, you’re not going to find better, fresher food.

Located in the food court next to H Mart. We had low expectations but I guess it’ll do to satisfy your sushi craving after shopping at H Mart. Simple concept: take a tray, choose your sushi off the conveyor, pay at the cashier, and find a seat and enjoy. You can order various noodle and rice dishes as well. The sushi variety on the conveyor wasn’t that impressive. It seemed fresh enough, but it made me wonder how long they’ve been rotating on the belt.
