This is a new food trailer north of Marshall. The owner has done this for 10 years and sometimes enters BBQ competitions for fun. He is in Oilfield work but when times are tough he cooks from this trailer. He serves only sausage and brisket. We liked the sausage and would go back again for it. The brisket was moist but did not have much flavor for us… it did have good fat with it though. His sauce was sweet and made the brisket better but we liked the sausage better without the sauce. He will serve brisket on a sandwich with pickles and Vidalia onions. The trailer looked old and cool with maybe old barn wood siding. He is camped out in the front of a trucking company east of 59. The price for us was 14.25 each for a half pound of brisket and a half pound of sausage. We did not ask about drinks there. It is small. The service was very friendly. He was once set up in Elysian Fields but moved here North of Marshall to try it. We would go back for his sausage.
