Crooked bastards. These people had a salami club. We purchased about 7 or 8 last year for our employees and some family members. They all got one of the three shipments, and closed shop. We paid for a whole year. Did we get a call, refund, or email? Hell no. Complete trash business owners. We got screwed out of over $ 1,000. Glad you went out of business, hope the rest happens to your Crap-hole diner Nicks Italian Café.

I love Fino in Fondo and frequently would detour through McMinnville just to procure the deliciousness. However as of now the tasting room has moved from the production facility and the atmosphere is not the same and we were not treated with the same happy attitude as before, I hope it was an off day and not the new normal.

After touring the vineyards we stopped at Fino to sample and quite simply walked away with whatever was not tied down. Thought the charcuterie in NYC was exceptional until I tried theirs. This truly is as good as it gets. Their restaurant was also exceptional, not your everyday Italian Bistro. If you’re going to McMinnville don’t miss these two.

Love. Love. Love. My hubby and I stopped by here when were out wine tasting. We had tried one of their salumis before. Scott let us taste every one of their salumis. Oh my gosh so good. He gave us a great explanation of the spices used and the process for making them. The people who own this place also own Nick’s Italian restaurant in town. They started making the meats for the restaurant but then they have expanded a little. This place is at the end of the road in an industrial looking building. Very small area to go in and buy, but man it is outstanding! If you like salamis and various meats this is THE place. I have tried Olympic provisions and love theirs also, but Fino just beats them out. Why? Well for me the meats are a little easier to slice, the texture makes it just a little easier to chew. The flavors are a little stronger, the salamis are a little wider in diameter. While we were there a woman came into buy ravioli or some kind of pasta that they make homemade from the restaurant. They had some in the freezer. Anyways, when we left we walked out buying one of every salumi they had. Yum Yum! Any time you are in McMinnville, this is a MUST stop place!

Recently I dropped in with my husband and another couple, and we had a lovely time tasting some meats and checking out other unique offerings. The gentleman who helped us was knowledgeable and friendly. I took home their spiciest salami(not very spicy, but I can not remember the name) and made myself a tasty meat, olive & cheese platter for dinner last week. I’ll be back.

Lets face it, they get five stars for all things pork related. I can’t find another place that makes me salivate just thinking about the various salamis. There’s a reason most good wineries and restaurants in this region offer cheese and meat plates hilighting this establishment all over the area. What I’m raving about it the other things they offer. Homemade noodles. Exotic sauces. Cheese, glorious decadent cheese. You need to stop by just to see what they have to offer, and then go home and make a spaghetti God would be envious of.

Fino in Fondo is the best. We have eaten the salumi at various places and couldn’t wait to actually visit. The store was staffed by Scott yesterday. What a great host. As he offered slices of each meat he explained the ingredients and process to make each salumi. When you visit you can see all the meat products hanging behind you in a big room with various racks. I have also had Olympic Provisions products and love them, but, Fino is a step above in flavor. The texture is a bit softer and more enjoyable. We made sure we went home with plenty of salumi to enjoy with some great cheese and bread. This is a great place to visit when in wine country.

I can’t pronounce charcuterie… but I can say salumi. Picture it. Driving down the coast with salumi in hand, not sliced but whole, just gnawing on it as I sped on by. Yes. This really happened. Is that low class of me? I don’t really care. Fantastic and hilarious service, we could’ve stayed there for hours and popped a bottle of wine eating salumi and chatting with the guy behind the counter. If you are wine tasting around the area, make a quick stop here to pick up some snacks, you won’t regret it.

«Charcuterie? That’s what that is? They’re killing themselves with that name.» — Jay from Modern Family. Yes, this is what charcuterie is. Delicious, fatty, savory, moan inducing tubes of meat(salumi) and cured pig parts. Fino in fundo is right up there with their big city competition, Olympic Provisions. The man behind the counter was super helpful and indulged my whimsy as he allowed me to taste everything. Tasting fees are waved with any purchase. Basically, it’s a free tasting because you’d have to be insane in the membrane to walk out of here without meat in your hands. Since they are relatively new, their cured meats(leg/shoulder) aren’t available for sale because they started curing them years ago, ahead of official health inspections. BUT, if you ask nicely, they will be glad to to slice some off for you for free and it is heavenly. It tastes so much better eating secret meat. The meat guy also sliced all the meats and my baguette into picnic ready slices. He’ll half slice the baguette so it’s easy to tear off individual pieces, but not get dried out. Fantastic service behind the counter. All the salumi is super delicious. If i had to pick a favorite it would be the truffle salumi and sopresssata. Fino in Fundo is on a must-do list for any trip to this part of Oregon wine country.

I’ve died and gone to charcuterie heaven! In McMinnville, of all places. Fino in Fondo is a fantastic little retail shop and charcuterie tasting room run out of an enormous 3,000 square foot curing facility off the main street in McMinnville. Run by the second generation chef owner Carmen Pierano(aka Nick’s daughter, from Nick’s Italian Café in McMinnville) and her equally talented chef husband, Fino in Fondo appears to be a labor of love. And by love, I mean we have fallen in love with this intimate artisan cured meat tasting room with views into a curing warehouse. After one too many pinot tastings, here is a completely original tasting stop on your tour of Oregon wine country. Don’t let the industrial looking exterior scare you, the retail shop inside is adorable and intimate, and for for $ 5 a tasting, Carmen herself talked us through a sample of six or seven different fantastic samples of her cured charcuterie, sharing little bits of her story along the way. They also sell fresh made pasta here, and from the looks of the locals coming in, it must be good. Lucky for McMinnville that Pierano and her husband returned to the town where she grew up to create a whole new culinary legacy. Highly recommend a visit.
