Bad news for Hoeffner’s shop from the Morristown health department, alas the inspector shut these old-school butchers down, no Thanksgiving treats this year, read all the deets here: The owners did not exactly promise to reopen so it looks bleak for German-style meat in town. Where am I gonna get sausage casing now? Hmm.

I am not squeamish or nervous about sanitation. I’ve eaten from roach coaches, inner-city Chinese places with bullet-proof windows, and have a very long«5 second» rule. However this place was so disgusting I walked out. Please do not assume I’m a germaphobe and just ranting. This place is really bad read other reviews labeling this place as «something out of a horror movie». Examples: 1) Celling tiles falling out of drop ceiling 2) Floor of the back portion of shop appeared to be plywood and no lights were on during processing of meat 3) Various cuts of meat sitting on top of the coolers to open air — not smoked products 4) Several bowels of marinade? left open to air 5) Butcher did not wash his hands after touching raw meat then smoked meat and vice-versa 6) Smelled of tobacco, not wood, smoke 7) Cover for the cooler’s fluorescent lighting was loosely hanging down 8) The garage doors in the rear of the building were broken and obviously not closed in years — obviously an entrance point for mice and other animals. 9) Various old papers, dust, and disorder throughout the shop.

I agree 100% with the other reviews. Looks like something out of a horror movie? Yes. Old school butcher? Yes. Bangin smoked pork chops? Absolutely. I came in here wanting a quality pork chop that I can’t seem to find at King’s. The butcher asked if I ever had a smoked pork chop– I said no. He sliced me a piece to try and I was sold. I didn’t even know such a thing existed. Cooked per the directions scribbled on the wax paper by the butcher they were absolutely awesome. After having these smoked chops I noticed that King’s was also selling them. I will tell you that Hoeffner Martins chops were 150x better looking than the King’s version– which is probably why I had never bought them from King’s and never will. I look forward to trying more things, and by more things, I mean everything from here. Next time I’ll try not to walk there after hot yoga on a super rainy freezing cold December night– that just added to the horror movie vibe.

Very cool spot. Very old school and customer service is amazing. He definitely is a historian and a pleasure to talk to. I got(2) 1.5 thick NY strips from there, cut right in front of us, $ 47.95 — but worth every penny.

Hoeffner’s, I salute you! You will never, ever find a better butcher. The sons of the original butcher live life on their own terms(as far as I can see as a dedicated customer) and so allow us to worship at the temple of meat. We eat very little meat but when we do, it is Hoeffner’s only. We grill their marinated chicken, we thrill to eat«Butt Le Faye» and we get a bunch of chorizo when we can. This butcher shop cries out to be the subject of a documentary. I urge Steve and his bro to train the next generation of butchers so that Hoeffner’s will be around for my children. You wanna duck? They’ll get it. A goose? No problems. You wanna carefully dressed t-bone? They do it. You wanna see the best paper maiche? It is there.

This is an unassuming(actually I think it looks like something out of a horror movie) but fantastic family-owned and operated old-school German butcher shop. The kind of place that remembers you after your second visit. Steve is great, he is a true Morristown historian, I’ve learned so much about town through my conversations with him. In case you forget any special cooking instructions he might share, don’t worry because he writes them on the wax paper for you. You NEED to get the smoked pork chops, if nothing else. They’re awesome. Also, we love the bacon-wrapped spinach stuffed chicken. Right now, he’s got boneless beef short ribs which I’ll def buy this week. FYI — Hoeffner’s is happy to take pre-orders for holidays. We got 4 full racks(which is a lot) of ribs for Father’s Day. Both sets of dads/stepdads said these were the best ribs they’ve ever had. I’d have to say they were also the meatiest.

80 lbs pig for a roast? Not a problem here. Waiting for me when I got there and it was butterflied and packed. My first time there and had to drive ½ hr. but it was worth it. It says its on Market St but wasn’t that easy to find because its on the split and it does look like its closed. These guys know what they are doing and perfect place to get a pig for a roast.

Yup it’s there and Steve is an awesome butcher. Seems like everyone came in has been coming there for years because he knew them all. Got myself a half pound of their bacon and some ground beef. Next time I’m going to see if he can make some stuffed pork chops I heard him talking to someone else about. Give it a shot.
