yes it is authentic. As you can see, Chinese eats here. But you dont have much selection as some middle town resterant.

The Chinese food they sell in these trucks is really authentic! They offer wide variety of Chinese dishes: tomato&egg over rice (my personal favorite), chicken&potato over rice (very delicious), shredded meat&veggie over rice, beef noodle soup, hand-​made noodle, Chinese hamburger (very famous!), dumplings, and so many more! And everything is very cheap: $ 5-​$ 6 for rice and noodle, and $ 3 for Chinese burger. No tax, no tips.
But something keep in mind: the lines could be long and you need to wait for while to get your food sometimes. And they might run out of the dishes you want after your late night class.

Grabbed lunch a couple times here already. All I can say when I finish my meal every time from this place is that I’m a full happy camper! What’s great about this place is their special. They allow you to choose 3 dishes (vegetables/​meat) for just $ 6! It also comes with a generous portion of rice. The lady serving the food stand is very nice and service is quick. They also serve some noodle dishes here, but I haven’t tried it yet. Also, depending on the time of day, lines can be pretty long! However, the wait isn’t bad and it’s totally worth it.
Things I would recommend: Kelp, Tofu, Cabbage, Egg & Tomato! Honestly, everything is pretty good and authentic so just give whatever you like a try. Most of the things are soy sauce based so choose a balance between things that are and aren’t.
Definitely a value-​driven, cheap eat just right outside Columbia!
