As a person who’s gone to a butcher for many many years now, I appreciate those who practice old school butchering and curing techniques. La Quercia is one of those vendors. their tasty pork products have surfaced in a decent handful of stores throughout CA now. Their prosciutto and coppa are very tasty but it’s the guanciale that I covet. Anyone who loves cured meats should try cured pig jowl in an Amatriciana pasta. Pure goodness
