Creameries upstate fall into two categories: those that make flavored varieties of cheddar that end up tasting like wax or plastic and those little gems that produce interesting cheeses like a Romano-Swiss blend that is great over sautéed greens like spinach or arugula. Sunset view creamery is the latter. With a savvy owner, Carmella Hoffman knows what she is doing with her small-production hard cheese outfit that I happened to be driving past on my way to Watkins Glen from Ithaca. I was delighted to learn about the cheese making methods– Carmella uses the milk straight from the cow to the vat– the already warm milk saves on heating/energy cost in cheese production. With some great raw milk varieties of cheddar, pasteurized jacks and some other experiments… it is a worthwhile diversion to visit on a weekend trip.
