I stopped by the Flying Pig for the first time today for lunch. Any time I try a new BBQ place I always get ribs and brisket. In my opinion these are the two holy grails of BBQ’d meatiness. I got a chopped brisket sandwich and two ribs, accompanied with a side of baked beans. The Ribs: Outstanding! They had a great smoky flavor and just the right pull off the bone. Seriously the ribs were better than I’ve had anywhere else, locally. The Brisket: Unctuous, very nicely flavored and tender. The only downside for me was that the bread seemed a little too«bready» for my tastes. I would have preferred a bun that had a little more chew to it. But overall it was delicious. Neither meats required sauce, however I did get some of the hot to try and it went very nicely with both. The baked beans were savory and had just the right amount of sticky sauce holding them together. Unfortunately they were just slightly undercooked and a little more firm than they should’ve been. After reading other reviews I will definitely try the mac & cheese next time. Overall I’m very pleased with the quality of BBQ they are putting out and will definitely be a repeat customer. After becoming jaded with all the other BBQ options around here it was refreshing to find a place that is committed to doing it right.

This place has perfected BBQ! I am eating my leftovers for breakfast and they are just as good cold. Also, the best mac and cheese I have ever had! I have had them twice at the Patriarch in Edmond and been equally impressed both times.

I decided to try The Flying Pig BBQ truck for lunch at Bleu Garten Food Truck Park today — my first time for both. I will save my comments on Bleu Garten for a future review. I checked the schedule to see who would be serving lunch today from 11 am to 5 pm and found that it was only the Flying Pig BBQ. I had not yet tried this BBQ truck so I quickly checked online for a menu to see if they had anything that sounded good to me. I am a native of South Carolina. When we say BBQ, we mean pulled pork with either a mustard sauce or a vinegar sauce. Needless to say, I was very excited to see that The Flying Pig BBQ offered several sauces, one of which was«Carolina Vinegar»!! I knew what I was going to have. I am not a big fan of most BBQ sides. They have the typical baked beans, cole slaw, potato salad, and macaroni & cheese. I decided to skip the plate that comes with two sides and just get a sandwich only, no side. I let a group of gentleman order first while I was looking. I noticed their menu board listed their sauces but not the Carolina Vinegar. When it was my turn, I ordered my pulled pork sandwich and asked about the Carolina Vinegar sauce. Sadly for me, they didn’t have any today. I was the second person who had asked for it. Fortunately there were some other choices besides Regular, Hot and Mango Habanero(even hotter)! They did have both Pineapple and Pineapple Coconut sauces. I do love fruit so I decided to choose the more unusual of the two so I got the Pineapple Coconut. I did not get their names but the lady working the window and the gentlemen fixing the food were both very friendly. The man told me that my timing was great for the pork because I was getting freshly pullled pulled pork. He was definitely right about that. The pork was moist and tender. I added the Pineapple Coconut sauce and it made for a mighty tasty sandwich. After I ate, I stopped back by the truck and told him how good the pork was. We talked about BBQ and also how Carolina Vinegar sauce, his favorite when he didn’t just eat the meat plain, is not as popular here. I told him that was why I was so excited to see it on their menu. He asked if I worked nearby. i said yes. He then told me when I saw them in advance on the schedule at Bleu Garten and knew I would be able to make it, to contact him the day before and he would make sure to bring some Carolina Vinegar sauce just for me. YES! You noticed I only gave them 4 stars — I am reserving the 5th star for after I get a pulled pork sandwich with Carolina Vinegar sauce.

Don’t take my word for it. Try it for yourself. Boy oh boy. My mouth waters just thinking about the goodness that is The Flying Pig BBQ. I know everyone has a particular palate for Que, but this by far has got to be the best I’ve had in terms of smokey, meaty goodness. — — -LONG story — — – My co-worker is neighbors with the family who owns and operates The Flying Pig. Delighted with glee, I placed a catering order with Pitmaster David and contemplated whether or not I ordered enough food for the office. It was more than enough BTW. David was super friendly and polite over the phone. He told me business was picking up and that he already had several days booked up for luncheons. Nice! That glorious day of BBQ arrived. Finally! David followed up with me a day in advance and arrived at the office right on time. The smells that were coming off his truck were intoxicating. It filled the conference room and I could tell that people were anxious to get started while we were setting up. Here was the line up for a carnivore’s dream: –Salmon & Ribs were the first to go. I unfortunately did not get to taste them, but I heard that they were excellent. Salmon was ordered by special request for our peskatarians. Obviously, it was well received. –Pulled pork = pork-o-licious. Not dry. Very flavorful and tender. Really stinkin’ good! –Brisket(chopped and sliced) — «Some of the best briscut I’ve had in Oklahoma. Even better than Leo’s» Quote provided by Joy’s Main Squeeze. I brought some home for him to try and he obviously hated it: P –Sauces– Regular, Mango Habanero, Carolina Vinegar. They even have a Pineapple-Coconut and Hot. The Sides –Baked potato and potato salad were both standard issue –Mac & Cheese. I confess. I gorged on this when I know I shouldn’t have. It’s a MUSTTRY. You can order it with or without sausage. Man oh man. It had a little crunchy layer with a light cheesy blend. Not soupy. I’m not a fan of runny cheese sauce so this hit the spot. –Slaw– White in color, but tart not overly sweet. It had a tiny kick to it too. The veggies were julienne sliced. I enjoyed it. — — — –Short N’ Sweet — — — — — — — - If you’re in the mood for BBQ with a variety of sauces and smoked meats… Go with The Flying Pig. You can’t go wrong with the meats. Everything was seasoned well and oh so tender. It eliminated the need for me to put sauce on the meats. If your a sauce person, you have a variety of flavors to please even the most discerning of palates. When you’re thinking about sides, order the Mac & Cheese. Just do it. Brisket+Slaw+Roll = Match Made In Heaven.

Awesome sauce!!! And it doesn’t stop there. The pulled pork sandwich had an authentic smoked flavor and was moist, but not greasy. The sliced brisket; tender, a good smoke ring and moist. The sides? Baked beans were by far the best combination of smokey, sweet, and spice I’ve ever had. This food truck is hard to miss, not only because it’s about 30 feet of bright orange, but also because wherever it stops, it’s got a line!
