Approach the cart and be ready for a smell I came to know well growing up in the Southwest. Cologne and Mexican Food. A cool dude(I say this because he’s wearing sunglasses) approaches the window and inquires about my order as I formulate it. I go with a chicken quesadilla and an al pastor taco. The quesadilla came out melty and delicious, extremely loaded with cheese and a bit skimpy on the meat. What’s curious about it is that it wasn’t in the slightest bit crispy. The whole thing was floppy and generally untoasted. The Al Pastor taco was a tasty little treat. Double corn tortilla and a good pile of pork. Not notably juicy or flavorful, but not dried out or bland at the same time. If Mexican food from a cart is your quest and you’re in this area(I refer to it as shallow Lacey), the California tacos parked down to road may be your best best.

I love taco trucks and this one does not disappoint. I don’t expect anything more than quick service, tasty tacos and hot sauce. Mad tacos has all three.

Mad Tacos, with their taco truck, gravel lot and outdoor eating area are pretty comfortably-situated between taco truck and taqueria, as much as they are between Lacey and Olympia. Their menu is larger than most taco trucks and they cater mostly to a working crowd, rather than the other Olympia taco trucks which cater to everyone from hippies to hipsters. Their tacos are fantastic in that they come with radishes, but that high point is short lived — they come with about a sixth of a radish each. Moreover, the two meats I’ve had were really unusually dry. The asada is dry seemingly due to excessive leanness — no oil and moisture from the amount of nearby fat you get with some types of asada. Indeed, the vat of raw asada it came out of looked to be almost entirely lean meat. With the dryness and no doubt in part due to the lack of fat, the asada is bland, perhaps even blander than Paco’s. The al pastor has more or less the right flavor, but there isn’t enough flavor, and again it’s dry, which really isn’t as good. For asada, I’d much rather go to Las Palmas in Shelton. For al pastor, I don’t have to stray as far from home — Ramirez market in Tumwater is among the best in Washington. Edgy name, definitely a nice place to go as the weather gets warmer, but the tacos at least were a let down, especially as Thurston county has doubled its options for proper tacos over the last year or so. These are proper, but come up short.
