My ideal Nutritional Pyramid would consist largely of cheese, cheese and a few things that I enjoy eating with cheese. But not just any cheese – fresh, local, organic cheese. And you know who does it right while not making me feel like a horrible person to my vegan frands? Mayfield Road effing-Creamery. No – seriously. Their cows literally graze and lay all day in the sun. The pictures make them look like the happiest bovines in the world. And I just happen to be the happiest girl in the world when I inhale a block of their havarti… or smoked gouda… or, well – you get the point. I know they’re in cow-heaven, so I feel fantastical eating their cheese. Their actual creamery shop is only open but twice per week(Fridays/Saturdays), but you can purchase their goods around town AND through the Fresh Fork Market. Hell, sometimes you even get a block in your CSA bag(if you’re lucky), but I *always* buy an extra one, just in case. Anyways, if you love cheese(or even if you just like it), find their’s, buy it and eat it. Or should I say, cut the cheese…
