When I go to the Farmers’ Market in Carrboro, I try to go with a full stomach so I’m not tempted to eat the baked goodies. Temptation generally wins. There I was, standing in front of a bakery case with a ridiculous name – Chicken Bridge – looking at the bagels. Sour dough bagels. Why I decided to buy one, I don’t know, especially as it was a whopping $ 2. I took a bite, then bought the remaining bagel. The following week I went online, ordered a dozen bagels for $ 1.60 each. This is my new go-to bagel place. Why? They are chewy, flavorful with a sourdough yeasty smell. With my first bagel, I handed out bites to friends at the market, watched their expressions register that aha, these are real bagels, not the doughy circles from other bakeries. I taste their bread samples every week, love the semolina fennel, but keep ordering bagels. They said that the bagels are complicated, take a long time. I can vouch that they are worth every penny. They also provide crusty hearty breads for a local CSA. PS I can’t find their phone number.
