Whole BBQ pig ! On my quest to try all the different styles of BBQ I was lucky enough to visit North Carolina!!! A great example of western North Carolina style BBQ with a vinegar based sauce. Being from California Its still wierd for me to think of bbq as being something smoked. The pig is smoked whole and served with the regular fixings… baked beans, potato salad, mac and cheese, and cole slaw. All the sides were average at best… I felt the pig was a bit dry for me… The sauce is very tasty, but it can only do so much as it is very watery.
