Hands down, this beautiful woman prepares the best burritos I’ve ever eaten. I’ve been to Mexico. I’ve been to high end Mexican American restaurants. Nothing compares to this consistent and organized tasty food cart. Flavorful, made to order.

Now, I just got a chicken burrito and I was only expecting a chicken burrito. The ingredients were simple I felt very well informed about what I was going to get. Holy moly. It was SO good! I wasn’t even that hungry but I ate the entire, gigantic burrito… just shovel, shovel, shovel in my mouth.

Beware: this is a cash only establishment. I work close to Montgomery park so I enjoy visiting the Fuego cart a couple of times per week. This is NOT a southwestern or Mexican food truck. It is more of a Latin-Asian fusion. I love the simplicity of the ordering system. The way it works is, you grab the pad and pen from the front of the cart and check off the appropriate boxes for your order. You can choose between a bowl or a wrap and also between chicken or veg. The rest is just customizing your order with desired condiments, some for additional cost. The chicken is marinated boneless, skinless thigh. The marinade is very Asian-inspired, like a light teriyaki sauce without the excessive sweetness. I believe it contains soy sauce, pineapple juice, and maybe ginger? Something like that. Their offerings tend to be on the healthier side, featuring brown ‘Spanish’ rice, organic spinach, black beans, fresh garden salsa, and a choice between yogurt or sour cream. The star of the show, in my opinion, is their«Portland Pickle» concoction, which is(again, I’m only guessing here based on flavor) a mix of green and red cabbage(and possibly shaved fennel) and shredded carrots with fennel seeds and caraway seeds. Or maybe it’s one seed or the other. Whatever. It’s awesome. I do believe there is some added sugar since it has a hint of sweetness but for the most part it is pretty savory as far as pickles are concerned. The portion sizes are generous and the taste and quality of the food is exceptional. Today I waited in line for about 30 minutes for my chicken and spinach bowl topped with salsa and Portland Pickle. I’d have waited longer if I had to.
