Only three stars because I’m comparing to other food trucks that kill um, it is very decent and the hot sauce is actually hot, like possibly ghost peppers in it… yum

It’s not every day that you see Barbecoa de Borrego. In fact, it’s damn rare to see Barbecoa de Borrego anywhere. A very loose translation of Barbecoa de Borrego would be «barbecued lamb». But in reality, Barbecoa de Borrego can manifest itself in different forms; it can be a stew or it can be a pulled meat. In the case of Taco Pacos, their lamb is pulled. I don’t know if Taco Pacos offers pulled lamb everyday of the week, but they do on Sundays, which we discovered yesterday on a trip to the Costco in NE. A one-half pound order of pulled lamb goes for six smackers. And just wow, Paco’s Barbecoa de Borrego is fantastic, seasoned perfectly(including just the right amount of salt). And the amount of lamb you get for the price is an absolute steal. Paco’s has a covered eating area, and in there, we discovered red and green salsa which we topped onto our lamb-loaded tortillas. In addition to the barbecoa, Pacos has an array of tortas(sandwiches), tacos and burritos. Update on 5÷28÷14: we came back this past Sunday and tried the consome de borrego(lamb soup). It was super delicious, made with rice and a generous amount of tender lamb. I’m staying with five stars for Taco Pacos!

Food is delicious, service is friendly and there’s even a dining room attached to the truck. The only thing missing was chips with my order.

Let’s get down to it This is a killer food truck. It’s $ 5.50 for a phat burrito. I recommend the carne asada burrito, or the chicken. Actually, its all good here. Great prices, great size of portion. Stop by here if your nearby, well worth it. Nice folks too!
