I have only scratched the surface but even then I will give this place 5 stars. They are not only very knowledgeable about what they are doing, they are totally into it! I know this is one of the few butcher shops that you can get whatever cut of meat from wherever you want. I have only purchased beef and some of the sausages that were outstanding. I ordered a kobe style brisket that took a day or two and was extremely reasonably priced. It went into the smoker for about 10 hours and was amazing! I have been so anti brisket and seems to be a waste of time to start with such a crap piece of meat but add all the delicious fat and its a whole new ball game. They make lots of pates that I am sure are delicious, there is some serious charcuterie here! they also have piedmontese beef, maybe kurobata pork, and other high end meat products, this is one of the few places you can get foie and veal here in town, and I appreciate it. They also make some of the best fried chicken ever! Its a once a week event that I need to revisit soon. This place is moving to a place on burnside I believe where it will be tied in with a new restaurant and I cant wait. The old location was in city market that was always a good place to shop but it was far from my house and their footprint was pretty small.

I don’t know what it is, but I have a serious thing for sausages and pates. Was I secretly raised by carnivorous Frenchy gourmands? I don’t know but I was impressed with the full range of meat products that Viande produces. Their stand at the Saturday farmer’s market offers up some very generous samples of several pates, rabbit, yum, chicken livers, oh yeah, so tasty! My only regret is that I didn’t get around to trying their foie gras pâté. The slabs of pâté are easy to pick up at the market for an extremely reasonable $ 5 – 7 each. That is an amazing price especially because they use free-range, natural, and/or hormone free meats. If you can’t make it to the market or to their butcher shop, you can also consume the tastiness at Simpatica brunches. Chef John Gorham has spent a lot of time honing his craft and it shows. Keep the art of charcuterie alive! 4.5 stars.
