So excited to try this place again. I have seen them a few times at the Tuesday Farmers Market in Fremont Park but I’m not sure where else they turn up. The first time I tried the BBQ here I got the Tri-Tip Sandwich and it was amazing. The sauce was perfect and not too sweet and the meat itself had that nice smoky bark on it to give it a little crunch to go with the soft, tender meat inside. Next time I plan on getting one of their plates so I can try out their baked beans. Everything on the menu looked great, but I may go Tri-Tip again because its one of my favorite BBQ foods.

oh HELL yes! bout time i meet a bbq vendor at an event that knows the meaning behind the word«HOT» in HotLink! Woo Hoo! My man ordered up a «Hot“Link dinner, that includes the link, side of potato salad, and side of beans for about $ 9, and i had the«Mild“Link sandwich for $ 7. The bbq sauce on my MildLink was delicious and had just enough warmth to it, meaning it left my mouth just warm enough. The bun was super soft and i give a two thumbs up on the MildLink sandwich. Now when i tried my man’s «Hot“Link, dayyyyummmm! That meat was tasty like a blowtorch! yet delicious. The Link was good and the«Hot» was that awesome, nose-running, on fire kinda hot. Now im a pretty weak palate when it comes to hot and spicy, and this hotlink may have been the«hottest» thing ive ever eaten… aside from some picy thai food. The«Hot“link was hot enough that i actually had to request an extra bun,(because the dinner option didnt come with one) and an extra side of potato salad to calm it all down! I must say both the sandwich and the dinner were super delicious, and i know that if i ever see Joshua’s Ribbs out at an event again, im gonna take up the label of «regular.» Woo Hoo. Joshua’s Ribbs is available for your event, so i was told by the guys working the event i attended. Good stuffs!

I actually haven’t been to the joint — but I can vouch for the meat. Over Memorial Day Weekend, SLT had a Rib«cook-off» down at the casinos which really means there were 7 – 8 bbq stands set up from various establishments selling their fine slow-cooked meat to the patrons. After staking out the situation and meandering about making internal notes about who was selling, what their set-up was and presentation, I made a decision based on pure Southern instinct. My boyfriend went for the first stand in the place — a decision I did not agree with when the little girl selling the meat couldn’t even tell me if their sauces were sweet or spicy. I chose Joshua’s Ribbs. Joshua’s Ribbs was a basic set-up: pop tent, table, meat, gigantic smoker and a group of people sitting in lawn chairs, laughing and having a good time. This was clearly my kind of set-up. This was verified when I said, ‘I’ve got myself a feelin’ ’bout this place. Y’all are reelin’ me in,” and they had a bit of a southern twang themselves. Although their shop is in Sac, they hail from various parts of Texas and Louisiana and the all important sauce was perfect — not sweet — which is my kinda sauce. The meat was tender and the potato salad was just like mom’s. I will be returning every day for four days to get myself some more of that slow smoked goodness.
