John helped us throw a unique holiday party this year by teaching a hands-on sausage making class for 14 people at our home. The event was a ton of fun(and a hit among our friends). John was prompt and communicative in helping us plan for the event, and careful to make sure we were all on the same page. During the class, John was professional, patient, informative, and entertaining. He is passionate about his work, which is evident in the thought he puts into classes and his careful sourcing of meat. Definitely a great time!

I am biased(I am the butcher’s wife!) but John really knows food. Having grown up raising hogs, then enrolling in culinary school, working at white table cloth restaurants, working as a wine and produce buyer and finally training as a butcher, John understands the industry far better — and from many different angles — than most. He is a born teacher(and, he likes to think, a good joke teller :) and because of his knowledge, life experience and training, he can talk anyone through why, how, when and what kinds of meats one should(and should not) eat, all while having fun doing it!

Great date night with my wife! We had a lot of fun and it was very educational. John is a great communicator, very knowledgeable, and passionate about farming and butchery. Between the interested food lovers people we met, the nice appetizers, the great wine we share and all the delicious sausages we took home I have to give John and his Sausage Class a 10 and will recommend it to everybody.

This was a blast! On a lark, I took a sausage making class from John, and I had a great time. The class was informative and I learned enough to make my own sausages. Yum! John is very knowledgeable and personable, and he had all the ingredients laid out so we got an education about how the different seasonings not only contributed to the taste but to the other characters of the sausage as well. I also had an opportunity to sample some of his own charcuterie and it is very good. He really knows his craft. He shared his philosophy about sustainable farming and butchery. He is an ethical and principled person regarding sustainable practices. I found the calls to be informative, entertaining and tasty! I would recommend attending one of his classes, or using his services. It was a great value.
