Man it pains me to typed this because we have been BIG fans of Billys since day one! We even went as far as getting a link of boudin from Best Stop, Don’s and Billys as a taste test when it first opened. Mind you this was years ago, but Billys won hands down. We ALWAYS hit up Billys when traveling East in I10 but sadly we won’t anymore. The establishment is very busy and instead of the crisp smoked boudin we oh so love, we received sloppy and soggy boudin that was prepared for the masses way too early and stuck in a warmer. It was so mushy you couldn’t tell the neat apart from the rice. So sad soooo so sad!

I don’t eat many burgers but this place ROCKS!!! I had the burger on sourdough bread with egg, bacon, mustard, ketchup and pickle and WOW… can’t wait to knock down my banana and peanut butter shake. Seriously this is a must stop if you are any where near the airport

Pepperjack boudin balls. Pepperjack boudin balls. Pepperjack boudin balls. Damnit. I thought if I looked in a mirror and chanted that three times some boudin balls would appear. I guess that’s only a myth. What would lead a somewhat rational person such as myself to try such a silly childhood chant? You guessed it! Pepperjack boudin balls from Billy’s! Billy’s is a full service Cajun meat market. In addition to the prepared items I will discuss later, they also carry a whole array of stuffed meats. I bought a pork roast and chicken stuffed with smoked boudin. The chicken was stellar, but the pork left a lot to be desired. There were no instructions for either item and the Internet wasn’t much help. The chicken cooked perfectly, but the pork roast was raw in the middle next to the stuffing. It took several tries to get it cooked properly. By then it had gotten dry and the only thing that saved it was half a bottle of chipotle Tabasco. I can ignore the slight problem with the stuffed items the second I bite into the boudin balls. Holy shit man. Who would’ve thought stuffing boudin with pepperjack cheese and frying it would be this good. But it’s incredible. So incredible that I didn’t mind waiting in a 20 minute line to ordr some. So incredible that I’m about to quit my job and head to Billy’s right now. If you’re anywhere near acadiana, I strongly encourage you to get to Billy’s and get some boudin balls.

Coming from SETX, I’m a lover all all things boudain. So, after passing by this place the past several years, I finally made a pit stop here on the way to Florida. While waiting in line(it moves fast), I grabbed a packet of crawfish and regular boudain to go. When I got up to the cashier, I got one boudain ball and 2 pieces(exactly 2 pieces) of crackilin(I mean, if you need more than that, you’re going to have a heart attack). The boudain balls here have an interesting batter — it’s more akin to a fried chicken batter. I’m used to a dry batter, not a wet batter. While I wasn’t used to it, I still really liked it. The ball is also the size of a softball! The boudain ball was perfectly steaming in the middle and crunchy on the outside. The cracklins were spicy and crunchy! The boudain links itself were TOOSALTY. They would benefit from cutting down on the sodium. I have to eat the boudain with a salad to cut the saltiness. I’ll stick with my DJ’s and Zummos’ boudain. If you’re in the vicinity, do stop by and get the boudain balls — you can skip the actual links.
